Hey there! I’m Colleen, the creator of Serving Up Simplicity. I’m all about living a healthy, balanced lifestyle while keeping things simple.
I’m a 20-something living in the heart of Houston with my husband Caleb. You can most often find me experimenting in my apartment kitchen or day-dreaming up new recipes while I binge watch Veronica Mars on Hulu (yes I am referring to the teenage drama from the early 2000s…. I just never got around to watching it, okay?). I also love to spend my time working out at the gym, hosting game nights for my friends and family, and doing just about anything to avoid the Houston heat.
I graduated from Harding University with a BFA in Graphic Design in 2016, and I currently work as a freelance graphic designer/blogger. Previously I worked as a graphic designer for a a marketing firm and before that a ballet, so I think it’s safe to say I’ve always been interested in creative pursuits.
I first fell in love with cooking and healthy eating the second semester of my sophomore year in college. I had just come back from spending the previous semester abroad in Greece (where I met my now-husband. I know, we’re adorable) when things slowly started to click for me. After comparing the delicious fresh food I had been eating all semester in Greece with the food that was available in my college’s cafeteria I was pretty much like NOPE.
Fast forward a few years and I decided to merge my love of healthy cooking with my love of all things creativity (photography, copywriting, etc) and start my Instagram account so that I could share my recipes with the world. After about 2 years of just sharing my recipes via Instagram I decided they really needed to more easily accessible (because nobody wants to scroll through 2 years of posts to find the perfect brownie recipe) so I created the Serving Up Simplicity website/blog.
Serving Up Simplicity is all about keeping things balanced and simple. I will be sharing tons of yummy healthy recipes, favorites, life updates, and more! I’m so glad you stopped by Serving Up Simplicity, and I’m honored to have you as a part of this community.
