Have you ever done something that you knew your future self would thank you for? For me, that is the definition of overnight oatmeal! On days when I wake up feeling like a real slug but then discover that I had prepped oatmeal the night before and now breakfast is saved?! Well that right there is like wining the lottery.

Let’s Take a Look at Some of the Ingredients
- rolled oatmeal – full of protein and fiber to keep you full for hours!
- vanilla yogurt (I used Greek yogurt) – adds a little extra sweetness plus extra protein.
- nut milk – you can use any type you want! I like this cashew milk best.
- cinnamon – helps to stabilize and lower blood sugar levels and also adds the best flavor.
- maple syrup – has a lower glycemic level than other sugars and adds the perfect touch of sweet to your oatmeal.
- Sautéed apples – the coziest way to eat apples, plus they’re full of fibre!
Top Tips for Making Apple Cinnamon Overnight Oatmeal
- Make it the night before so it has enough time to soak, soften, and develop all the delicious flavors.
- Amp up the amount of protein by adding in plain or vanilla collagen or protein powder (I like this collagen and this protein powder)
- My recipe calls for 2 tsp of maple syrup but you can sweeten it to your preference by adding additional maple syrup, honey, or agave.
- In addition to the sautéed apples feel free to add dried nuts, nut butter, or any toppings you want.
- Make this in a mason jar if you’re taking it on the go!

Apple Cinnamon Overnight Oatmeal

Sautéed apples, rolled oats, and cinnamon make this Apple Cinnamon Overnight Oatmeal the perfect way to start your day. So cozy and delicious!
Ingredients
- 1 cup rolled oatmeal
- 1/3 cup vanilla yogurt (I used Greek yogurt)
- 2/3 cup nut milk
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 2 tsp maple syrup
- Pinch of salt
For the Apples:
- 1 chopped peeled apple
- 2 tsp maple syrup
- 1/2 tsp cinnamon
- Pinch of salt
- 1/2 tsp corn starch mixed with 3 tbsp water
Instructions
For the Oatmeal:
- Combine all ingredients in a jar or container that can be sealed and stir well.
- Store in the fridge overnight or up to 1 week.
- Add more liquid in the morning if needed. Eat warm or cold topped with apples and additional toppings of choice.
For the Apples:
- In a small saucepan, bring the apple ingredients to a light simmer. Cook, stirring often, until juices start to thicken. This should take about 5 minutes on medium-high heat
Notes
- You can make the apples when you mix together together the oatmeal and store them both (together or in separate containers, whichever you prefer) in the fridge overnight. Or you can also make the apples fresh the morning you want to eat the oatmeal. Either works.
