Apple Cinnamon Overnight Oatmeal

Sautéed apples, rolled oats, and cinnamon make this Apple Cinnamon Overnight Oatmeal the perfect way to start your day. So cozy and delicious!



  • 1 cup rolled oatmeal
  • 1/3 cup vanilla yogurt (I used Greek yogurt)
  • 2/3 cup nut milk
  • 1/2 tsp vanilla 
  • 1/2 tsp cinnamon 
  • 2 tsp maple syrup 
  • Pinch of salt 

For the Apples:

  • 1 chopped peeled apple
  • 2 tsp maple syrup 
  • 1/2 tsp cinnamon 
  • Pinch of salt
  • 1/2 tsp corn starch mixed with 3 tbsp water 


For the Oatmeal:

  1. Combine all ingredients in a jar or container that can be sealed and stir well.
  2. Store in the fridge overnight or up to 1 week.
  3. Add more liquid in the morning if needed. Eat warm or cold topped with apples and additional toppings of choice.

For the Apples:

  1. In a small saucepan, bring the apple ingredients to a light simmer. Cook, stirring often, until juices start to thicken. This should take about 5 minutes on medium-high heat


You can make the apples when you mix together together the oatmeal and store them both (together or in separate containers, whichever you prefer) in the fridge overnight. Or you can also make the apples fresh the morning you want to eat the oatmeal. Either works.
