Apple Crisp Bars! Think your favorite apple crisp recipe but in a bar form with a scrumptious crumble topping and base. Delicious!
Ohhhhhh apple crisp, you gotta love it! For me it brings me back to my childhood and my mom constantly baking apple crisp, cobbler, and pie all summer long because we had several apple trees and we couldn’t quite keep up with them. For some reason no one would ever eat the apples by themself (they were pretty small) and everyone would always favor the peach trees.
And yet my dad kept replacing all the peach trees with apple trees…. why you ask? Because friends my dad is an enigma who’s better left as a mystery. Aren’t all dads though, if we’re being honest? Dads are gonna do what Dads are gonna do.
Anywho, these bars are super simple, low in sugar, and just dang delicious. The flavors of an apple crisp just can’t be beat! I recommend serving these with a scoop of vanilla bean or caramel ice cream!
Let’s Take a Look at Some of the Ingredients:
- Apples – Any variety you like will work! I used a mixture of tart and sweet apples.
- Coconut Oil – Really helps the topping to crisp up in the oven. Butter would work as well.
- Coconut Sugar – Personally, I love the lighter taste of coconut sugar plus I’m a fan of it being a little on the “healthier” side as far as granulated sugars go. However, this could easily be swapped for white sugar or a lighter brown sugar.
- Maple Syrup – has a lower glycemic level than other sugars and adds the perfect touch of sweetness. Feel free to switch it out for honey or agave.
- Cinnamon, Nutmeg, and Cloves
- Corn Starch – you can also use arrowroot powder. Corn starch helps to thicken the juices in the oven.
- Old Fashion Rolled Oatmeal – I don’t recommend using steel cut oatmeal, I haven’t tried using instant but that should also work.
- Almond Flour – Almond flour is one of my favorite flours to bake with because it contains more nutrients than all purpose flour.
- Milk of choice – I used almond milk for this recipe but any will work.

Apple Crisp Bars

Ingredients
For the apple filling:
- 5 cups chopped apples, peeled
- 1 tbsp coconut oil
- 2 tbsp coconut sugar
- 1 tbsp water
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- Pinch of salt
- 1 tbsp cornstarch whisked with 1 tbsp water
For the oat crumble:
- 1 1/2 cup almond flour
- 1 1/4 cup old fashioned oatmeal
- 1/3 cup coconut sugar
- pinch of salt
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- pinch ground cloves
- 1/3 cup coconut oil
- 2 tbsp maple syrup
- 2 tbsp milk of choice (I used almond milk)
Instructions
- Line an 9×9 pan with parchment paper and preheat the oven to 350 degrees F.
- In a medium saucepan, combine the apples, coconut oil, sugar, water, maple syrup, cinnamon, and salt Turn the heat up to medium and let the mixture simmer for about 10-15 minutes or until thickened.
- Remove from heat and whisk in the cornstarch and water mixture. Let cool as completely as possible before assembling the bars.
- While the apples are simmering, combine the flours, oatmeal, sugar, salt + spices in a bowl. Add the coconut oil, maple syrup, and milk and use your fingers to combine into a crumbly mixture. Pour 3/4 of the mixture into your prepared pan, firmly pushing it down evenly and into the corners and bake for 15 minutes.
- After you’ve baked the base, spread the apple filling on top, then sprinkle the remaining crumble across the fruit mixture. Bake for an additional 30 minutes or until lightly golden brown. Remove from the oven and let the bars cool completely in the pan before slicing and serving (otherwise they may be too soft and fall apart). Keep in the fridge until ready to eat.
Notes
- I like to stick the apple mixture in the fridge to cool while the base is pre-baking. It speeds up the cooling process!
