Description

Apple Crisp Bars! Think your favorite apple crisp recipe but in a bar form with a scrumptious crumble topping and base. Delicious!

Ingredients

For the apple filling:

  • 5 cups chopped apples, peeled
  • 1 tbsp coconut oil 
  • 2 tbsp coconut sugar
  • 1 tbsp water 
  • 2 tbsp maple syrup 
  • 1/2 tsp cinnamon
  • Pinch of salt 
  • 1 tbsp cornstarch whisked with 1 tbsp water 

For the oat crumble:

  • 1 1/2 cup almond flour
  • 1 1/4 cup old fashioned oatmeal
  • 1/3 cup coconut sugar 
  • pinch of salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • pinch ground cloves
  • 1/3 cup coconut oil
  • 2 tbsp maple syrup 
  • 2 tbsp milk of choice (I used almond milk)

Instructions

  1. Line an 9×9 pan with parchment paper and preheat the oven to 350 degrees F.
  2. In a medium saucepan, combine the apples, coconut oil, sugar, water, maple syrup, cinnamon, and salt Turn the heat up to medium and let the mixture simmer for about 10-15 minutes or until thickened.
  3. Remove from heat and whisk in the cornstarch and water mixture. Let cool as completely as possible before assembling the bars.
  4. While the apples are simmering, combine the flours, oatmeal, sugar, salt + spices in a bowl. Add the coconut oil, maple syrup, and milk and use your fingers to combine into a crumbly mixture. Pour 3/4 of the mixture into your prepared pan, firmly pushing it down evenly and into the corners and bake for 15 minutes.
  5. After you’ve baked the base, spread the apple filling on top, then sprinkle the remaining crumble across the fruit mixture. Bake for an additional 30 minutes or until lightly golden brown. Remove from the oven and let the bars cool completely in the pan before slicing and serving (otherwise they may be too soft and fall apart). Keep in the fridge until ready to eat.

Notes

  1. I like to stick the apple mixture in the fridge to cool while the base is pre-baking. It speeds up the cooling process!
