This morning when I went to the gym I unfortunately forgot my headphones which therefore meant that I was subjected to the natural noises of the gym…. I don’t mind listening in on a good gym bros bonding session….. the bros: “hey bro” “yeah bro”? “what’s up bros”. Me: “am I actually in a movie right now”? But I could certainly do without all the gym grunting. Does every grunt add just a little bit of strength or what’s the deal exactly?
Luckily I already had these blueberry oatmeal muffin cups prepped and waiting for me at home so I counted them as my reward for making it through the gym sans headphones. They’re really the perfect breakfast to be able to grab on the go! I love to top a few with peanut butter for an extra boost or eat one with a side of scrambled eggs. So yummy!
For these Blueberry Oatmeal Muffin Cups you will need:
- banana
- rolled oatmeal
- blueberries (fresh or frozen)
- nut milk
- vanilla
- cinnamon
- baking powder
- sea salt
- vanilla protein powder (this one is my favorite)

Blueberry Oatmeal Muffin Cups

These Blueberry Oatmeal Muffin Cups are the perfect grab and go breakfast! Make them as part of your meal prep and have breakfast ready for the week.
Ingredients
- 1 mashed banana
- 1 cup old fashioned rolled oatmeal
- 1/2 cup blueberries (fresh or frozen)
- 3/4 – 1 cup milk (I used cashew)
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1 tsp baking powder
- pinch of sea salt
- 1 scoop of vanilla protein powder (optional)
Instructions
- Preheat the oven to 400 degrees and prepare 6 muffin cups (either with nonstick spray or muffin liners.)
- Mix all ingredients in a bowl and then divide into muffin tins.
- Bake for 18-20 min. Let cool and enjoy!
Notes
If you don’t add in any sort of protein powder only use 3/4 cup nut milk. Use a full cup if you use protein powder. The protein powder thickens it a bit.
