It occurs to me that eating carrot cake flavored things after Easter kind of seems like wearing white after Labor Day or eating peppermint before Christmas. But knowing myself, you will probably find me the day after Labor Day sitting in all white with this carrot cake oatmeal bake in one hand and a peppermint latter in the other just because #IDoWhatIWant. Who’s with me?? Seriously though this oatmeal bake has got to be one of my favorite flavor combos! The sweetness of the carrots, the crunch of the walnuts, it’s just too good!
To make this Carrot Cake Oatmeal Bake you will need:
- rolled oatmeal
- nut milk
- banana
- vanilla
- pinch of salt
- baking powder
- cinnamon
- vanilla protein powder (this one is my favorite)
- carrot
- walnuts

Carrot Cake Oatmeal Bake

This carrot cake oatmeal bake is gluten-free, vegan and packed with flavor! There’s no better way to start off your day than with a hearty oatmeal bake that’s all for you.
Ingredients
- 1/2 cup rolled oatmeal
- 1/2 cup milk of choice (I used cashew)
- 1/2 mashed banana
- 1/2 tsp vanilla
- pinch of salt
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 scoop vanilla protein powder (optional)
- 1 small finely grated carrot
- 1–2 tbsp chopped walnuts
Instructions
- Preheat the oven to 400 degrees and grease or spray an oven safe dish (or line with parchment paper).
- Mix all ingredients in a separate bowl, pour into prepared dish, and bake for 25 min.
- Let cool, add your favorite toppings, and enjoy!
Notes
- If you don’t use any vanilla protein powder, you may want to add a little maple syrup or sugar to make it a little sweeter
- In addition to the cinnamon, allspice, ginger, and nutmeg are also great spices to add in. These are stronger spices so I wouldn’t add as much as the cinnamon, just a dash of each.
