If a dress doesn’t have pockets large enough to fit a cookie then I’m not interested, you feel me? These cookies are chewy and delicious and make the perfect snack or dessert! I think I’ve figured out that about 99% of my recipes have some sort of chocolate in them and I’m here for it! Easy. Delicious. Full of chocolate. You get the picture!
To make these Chewy Chocolate Chip Oatmeal Cookies you will need:
- cashew butter
- maple syrup
- egg
- coconut flour
- coconut sugar
- baking soda
- rolled oatmeal
- chocolate chips
- salt

These Chocolate Chip Oatmeal Cookies are perfectly soft and chewy and made with wholesome ingredients to keep you feeling good.
Ingredients
- 3/4 cup cashew butter
- 1/4 cup maple syrup (or honey)
- 1 egg
- 1/4 cup coconut flour
- 2 tbsp coconut sugar
- 1/4 tsp baking soda
- 1/2 cup old fashioned rolled oats
- 1/4 tsp salt
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 325 F. Line a baking tray with parchment paper and set aside.
- Whisk together the cashew butter, maple syrup, and egg until smooth. Add the remaining ingredients and combine well again.
- Refrigerate the dough for 30 minutes – 1 hr.
- Scoop the dough out onto a parchment lined tray (they will spread in the oven so you don’t have to flatten them.) and bake for 15 – 17 minutes. (these cookies are naturally pale in color if you use cashew butter but they will start to turn golden around the edges when they’re done). Store in the fridge.
Notes
You can substitute the cashew butter for peanut butter or almond butter.
