Hello Chocolate Chip Banana Bread Oatmeal Bake! Aka your new favorite breakfast. All the flavors of banana bread, in a super easy 1-serving size baked oatmeal.
On a scale of 1 to super weird, how weird would it be if I whipped out this oatmeal bake in my co-workers car as we drive to a work meeting?? I would say I’m “asking for a friend” but let be real; we all know I’m not. Can you blame me when this oatmeal bake is so easy to make in advance and grab as I head out the door in the morning?
Plus this particular oatmeal bake is packed with banana bread flavors and chocolate chunks. I love adding a large scoop of creamy peanut butter on top when I’m eating it but you can do anything you want! Trust me, you’re going to be a fan!
To make this Banana Bread Oatmeal Bake you will need:
- rolled oatmeal
- nut milk
- banana
- vanilla
- pinch of salt
- baking powder
- cinnamon
- vanilla protein powder (this one is my favorite)
- chocolate chips/chunks

Chocolate Chip Banana Bread Oatmeal Bake

Description
All the delicious flavors of banana bread in a 1-serving oatmeal bake, you’re new favorite breakfast!
Ingredients
- 1/2 cup rolled oatmeal
- 1/2 cup milk of choice (I used cashew)
- 1/2 mashed banana
- 1/2 tsp vanilla
- pinch of salt
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1 scoop vanilla protein powder (optional)
- 1 tbsp chocolate chips (or to taste)
Instructions
- Preheat the oven to 400 degrees and grease or spray an oven safe dish (or line with parchment paper).
- Mix all ingredients in a separate bowl and then pour into prepared dish. Add extra banana slices and chocolate chips on top (optional) and bake for 25 min.
- Let cool, add your favorite nut butter on top, and enjoy!
Notes
I like adding vanilla protein powder or vanilla collagen because it adds an extra touch of sweet without needing to add sugar (plus it adds protein of course), but it’s totally optional! If you don’t add any, I would suggest giving the batter a little lick and if it’s not sweet enough just add a little drizzle of honey or maple syrup.

I tried out the chocolate chip banana oatmeal bake and it was awesome!
I didn’t have the chocolate chips so I substituted in some sultanas and roasted peanuts.
Topped with sliced banana and super crunchy peanut butter!
Will definitely be trying again!
