Chocolate Chip Cashew Blondies

I don’t think I’ve ever related to song lyrics as much as Ed Sheehan’s I Don’t Care “I’m at a party I don’t wanna be at. Wonderin’ if I could sneak out the back”. Yep. That basically summarizes my life in any social situation. I pretty much go to parties and get togethers for the snacks…. like these Chocolate Chip Cashew Blondies! Blondies are that interesting dessert that are often forgotten about yet always a crowd favorite when they do make an appearance. I’ve put a healthier twist on these beauties by using ingredients like coconut sugar and cashew butter. With the perfect gooey center, you are sure to love this blondie twist!

Chocolate Chip Cashew Blondies

For these Chocolate Chip Cashew Blondies you will need:

  • one one gluten free flour
  • baking powder
  • baking soda
  • salt
  • cashew butter
  • coconut sugar
  • vanilla
  • nut milk
  • eggs
  • chocolate chips

Description

These deliciously thick and chewy Chocolate Chip Cashew Blondies are full of chocolate chips, delicious flavor, and wholesome ingredients.


Scale

Ingredients

  • 1 1/2 cup gluten free flour (one to one replacement flour)
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup cashew butter (or peanut butter)
  • 1/2 cup coconut sugar
  • 1 tsp vanilla
  • 3/4 cup nut milk (I used cashew)
  • 2 eggs
  • 1 cup chocolate chips

Instructions

  1. Pre-heat the oven to 325 F. Line an 8X8 baking pan with parchment paper and set aside.
  2. In a medium size bowl whisk together flour, baking soda and salt.
  3. In a large bowl whisk together the cashew butter, coconut sugar, vanilla, milk, and eggs until smooth.
  4. Add the dry ingredients to the wet and mix until smooth. Fold in the chocolate chips.
  5. Pour batter into your pan, smooth it out until it’s even, and bake for 24-28 minutes. (You don’t want to over bake. The center will still be gooey). Let cool and enjoy!

Notes

  1. I like my blondies a little gooey in the center but if you don’t just cook them until a toothpick comes out clean.
  2. You can switch out the cashew butter for creamy almond butter or peanut butter.
  3. If you’re not gluten free you can also use regular all-purpose flour.
