The ultimate grab-and-go morning meal, these Chocolate Chip Pumpkin Breakfast Cookies are fully loaded with oatmeal, pumpkin, peanut butter, and more!



  • 1 ripe banana, mashed
  • 3/4 cup pumpkin puree
  • 2 cups old fashioned rolled oatmeal
  • 1/2 cup creamy peanut butter or almond butter
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/2 cup chocolate chips


  1. Preheat the oven to 325. Line a baking tray with parchment paper and set aside.
  2. Mix all ingredients together in a bowl until fully combined.
  3. Measure out ┬╝ cup of the cookie dough for each cookie and press down slightly.
  4. Bake for 20 minutes. Let cool and enjoy!
