These Chocolate Chip Sweet Potato Bars are packed with oatmeal, sweet potato, walnuts, and tons of chocolate goodness. They make the perfect make-ahead breakfast or snack!

Oh sweet potatoes, what can’t you do?? You can turn yourself into fries, pancakes, tater tots, and now the most delicious gooey sweet potato bars. And don’t worry, if you’re a little on the fence about adding sweet potato to a snack bar, it doesn’t add the strongest of flavors. You won’t feel like a sweet potato is punching you in the mouth, just adding a subtle bit of sweet while providing the most luscious gooey texture. Trust me, you’re going to love!

Lets take a look at some of the ingredients:

  • Mashed Sweet Potato – I steam or bake sweet potatoes until soft and then peel and mash them. You can also just buy canned puréed sweet potato (or use canned pumpkin purée)
  • Almond Butter – Any nut butter will work, but I love the flavor the almond butter brings to these bars.
  • Maple Syrup – If you don’t have maple syrup you can replace it with any liquid sweetener, honey, agave, etc.
  • Old Fashion Rolled Oatmeal – I don’t recommend using steel cut. I have not tested instant oatmeal but it should work.
  • Walnuts – The walnuts are totally optional! I know not everyone is a “nuts in baked goods” fan. You can also switch out walnuts with whatever your favorite nut is: pecans, macadamia nuts, etc.
  • Chia Seeds – Full of fiber and antioxidants and they add the best texture!
  • Cinnamon – helps to stabilize and lower blood sugar levels and also adds the best flavor.
  • Chocolate Chips: I used milk chocolate chips and chunks because that’s what I had on hand but you can use any type that you prefer.

Description

These Chocolate Chip Sweet Potato Bars are packed with oatmeal, sweet potato, walnuts, and tons of chocolate goodness. They make the perfect make-ahead breakfast or snack!


Ingredients

Scale
  • 1 1/3 cup sweet potato, mashed/puréed
  • 2/3 cup creamy almond butter
  • 1/4 cup maple syrup
  • 2 cups rolled oatmeal
  • 1/2 cup chopped walnuts
  • 2 tbsp chia seeds
  • 2 tsp cinnamon
  • pinch of salt
  • 1/2 cup chocolate chips/chocolate chunks (plus more to sprinkle on top, optional)

Instructions

  1. Preheat the oven to 400F. Line an 8×8 baking dish with parchment paper (or spray with non-stick spray) and set aside.
  2. In a large bowl combine the sweet potato, almond butter, and maple syrup until smooth.
  3. Add in the oatmeal, walnuts, chia seeds, cinnamon, and salt and mix until smooth. Fold in chocolate chips.
  4. Scoop dough into prepared pan, sprinkle chocolate chips on top, and bake for 12 – 15 minutes. Let cool, slice, and enjoy!
