Description

These Chocolate Chunk Oatmeal Cookie Bars are super easy, so delicious, and only require one bowl! The perfect quick dessert or snack (or even breakfast!)

Ingredients

  • 1 1/2 cups rolled oatmeal
  • 1 cup almond flour
  • 1/3 cup coconut sugar
  • 3 tbsp maple syrup
  • 1 teaspoon baking soda
  • 1/4 tsp salt
  • 1/2 cup almond butter
  • 1/3 cup almond milk
  • 1 large eggs
  • 1 teaspoon vanilla
  • 1/2 cups chocolate chunks

Instructions

  1. Preheat the oven to 350 degrees F and line a 8×8 baking pan with parchment paper.
  2. In a large mixing bowl, mix the oatmeal, flour, sugar, maple syrup, baking soda, salt, almond butter, almond milk, eggs, and vanilla until smooth. Stir in the chocolate chunks.
  3. Press the dough into the prepared baking dish and bake for 20 minutes or until the edges are set and the bars are golden. Let cool and then cut into bars.

Notes

  1. Remember to let the bars cool before you cut into them. They will set up more as they cool.
