Does anyone else feel like every day in this global pandemic/quarantine is completely crazy and always different? Some days I find myself being super productive, cleaning and organizing all the things, reading new books, baking banana bread, and slamming out work on the computer. And other days? Other days I find myself mindlessly staring into the fridge, spending 20 minutes trying to decide what to eat for breakfast because my motivation level is 0. So naturally then I end up eating coffee cake that’s been sitting in my fridge since Christmas because it only takes 20 seconds to microwave……
Well if you’re feeling any sort of highs and lows like I am then I have the perfect thing for you. Cinnamon Roll Overnight Oatmeal! Prep it when you’re motivated and then consume it when you’re feeling like slug. It’s creamy, it’s delicious, it’s cinnamon-roll inspired, it’s really all the good things!

What makes overnight oats so great?
There are so many reasons to prep overnight oats for your breakfast the next day! Here are some of my favorites:
They’re the best make-ahead breakfast – Seriously though overnight oatmeal takes minutes to mix up! I’m pretty sure I could throw this recipe together faster than it takes me to brush my teeth with my automatic toothbrush. (On a separate note, does anyone else feel like those automatic timed toothbrushes are playing a practical joke on us all and actually take 20 minutes??)
Customizable – Overnight oatmeal really is the most customizable breakfast! In this post I’m specifically talking about my cinnamon roll flavor but once you get the idea of overnight oats down, get creative with it! Different spices, fruits, protein powders, yogurts, milks, the possibilities are endless!
It tastes amazing – If you’ve never tried overnight oatmeal then you’re in for a real treat! Soaking oats overnight truly makes them so thick and creamy, almost a pudding-like consistency!
Easy to make in bulk – The base recipe serves 2 but you can easily make a larger batch to quickly prep breakfast for the entire week. Just click on “Scale 2X” or “3X” below to easily double or triple the recipe.
A great nutritious breakfast – This recipe is full of nutritious ingredients but you can easily switch things up to customize it to your needs. Add additional protein powder for more protein, omit the sweetener to cut back on sugar, or bulk it up with additional chia seeds.
What the best way to eat Cinnamon Roll Overnight Oatmeal?
One of the great things about overnight oatmeal is you can eat it straight out of the container, hooray for no dishes! I like mine cold but if that’s not your thing you can also heat it up on the stove or in the microwave.
Next add your favorite toppings and enjoy! Oatmeal is just not the same without all the toppings in my opinion. Some of my favorites are nut butter, walnuts, and banana slices. The options are endless!

Cinnamon Roll Overnight Oatmeal

Cinnamon, rolled oats and a hint of vanilla makes this Cinnamon Roll Overnight Oatmeal the perfect way to start your day. Simple and delicious!
Ingredients
- 1 cup rolled oatmeal
- 1 tbsp chia seeds
- 1 scoop vanilla protein powder
- Pinch of salt
- 1/2 tsp vanilla
- 1/2 – 1 tsp cinnamon (I like a lot of cinnamon so I used the full tsp)
- 1–2 tbsp maple syrup
- 1 cup nut milk (or coconut milk)
Instructions
- Combine all ingredients in a jar or container that can be sealed and stir well.
- Store in the fridge overnight or up to 1 week.
- Add more liquid in the morning if needed. Eat warm or cold topped with fruit, nut butter, nuts, or toppings of choice.
Notes
- You can use any protein powder you choose, this one is my personal favorite!
