Classic Banana Bread

Is there anything better than a classic banana bread fresh out of the oven? I certainly can’t think of anything! Makes for the perfect breakfast or snack.

Ohhhhhh banana bread, what would I do without you always saving the day? Let an avocado sit for a few days too long and BAM that sucker is done for good! You let a banana sit for a couple days too long? Pat yourself on the back because now you have the perfect excuse to bake up some banana bread.

I could eat a slice of a classic banana bread just about every single day if I’m being honest. Fresh from the oven or topped with a little nut butter and banana slices? Nothing better! This classic recipe is gluten free and lightened up by using coconut oil and coconut sugar, but it’s so good you won’t even be able to tell that it’s a healthier version!

What’s the best way to store Healthy Banana Bread?

To ensure that it doesn’t dry out, store your bread in an airtight container. Store at room temperature for a few days or in the refrigerator for five to seven days.

Lets take a look at some of the ingredients in this Classic Banana Bread:

Bananas – Can’t have banana bread without bananas! Make sure you use very ripe, spotty bananas! This will ensure that the bread is perfectly moist and sweet.

Eggs – I haven’t tried replacing the eggs with flax or chia eggs but if you do let me know in the comments!

Coconut Oil – My favorite substitute for other oils and sometimes even butter.

One to One Gluten Free Flour – I’m a gluten free gal myself, but you could certainly swap the gluten free flour for regular all purpose flour.

Coconut Sugar – I love the lighter taste of coconut sugar and I’m a fan of it being a little on the “healthier” side as far as granulated sugars go. However this could easily be swapped for white sugar or a lighter brown sugar.

Chocolate Chips – Chocolate chips are delicious in any banana bread recipe but you can also keep it plain or switch it up with other add-ins like nuts or coconut flakes!

Description

Is there anything better than a classic banana bread fresh out of the oven? I certainly can’t think of anything! Makes for the perfect breakfast or snack.


Ingredients

Scale
  • 1 1/2 cup one to one gluten free flour
  • • 1/3 cup coconut sugar
  • • 1 tsp baking soda
  • • Pinch of salt
  • • 1/2 tsp cinnamon
  • • 2 ripe bananas, mashed
  • • 1/3 cup melted coconut oil
  • • 1 tsp vanilla
  • • 2 eggs
  • • 1/2 cup chocolate chips (I used mini)

Instructions

  1. Preheat the oven to 350F. Line a loaf pan with parchment paper or spray with non-stick spray and set aside.
  2. In a small mixing bowl combine the flour, coconut sugar, baking soda, salt, and cinnamon.
  3. In a large mixing bowl mix together the bananas, coconut oil, vanilla, and eggs until smooth.
  4. Gently fold the dry ingredients into the wet until just combined. Stir in the chocolate chips.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes or until a toothpick comes out clean. (Don’t over bake or it will be dry).

Notes

  1. I added mini chocolate chips to this recipe but feel free to add anything you want! Switch out the chocolate chips for walnuts or make it a chocolate chip nut combo!
  2. I used one to one gluten free flour but you could also use regular all-purpose white flour. The key to this recipe is to keep an eye on it because if you over-bake it then it will be dry.
  3. I recommend storing your banana bread in an airtight container so that it doesn’t dry out.
