Okay guys so I want to write something about cranberries and white chocolate and how these no-bake Cranberry White Chocolate Granola Bars are basically the best thing since sliced bread, but I’m coming up a little short because I’m a tad distracted….. while writing this I am simultaneously listening to a Radiolab (podcast) episode about how no one has ever been able to witness eels mating in the wild and all we know is that it is hypothesized that they travel years to get to their supposed mating ground: aka around the Bermuda Triangle area. But we don’t actually know. Because in the history of the world their mating has NEVER been witnessed in the wild! So yeah. Now I’ve got eels on the brain and those really just don’t have anything to do with granola bars.
But I think you can catch my drift all the same…. Cranberries. White Chocolate. No Bake. Best thing since sliced bread. You’re picking up what I’m putting down.
To make these Cranberry White Chocolate Granola Bars you will need:
- rolled oatmeal
- creamy almond butter
- honey
- coconut oil
- dried cranberries
- white chocolate chips
- collagen (optional)

Cranberry White Chocolate Granola Bars

White chocolate and cranberries, a flavor combination made in heaven, brought together to make the easiest no-bake granola bars!
Ingredients
- 2 cups rolled oatmeal
- pinch of salt (if almond butter is unsalted)
- 1/3 cup dried cranberries
- 1/3 cup white chocolate chips
- Optional: 2 scoops of collagen
- 1 cup creamy almond butter
- 1/4 cup honey
- 2 tbsp coconut oil
Instructions
- Line an 8×8 pan with parchment paper and set aside.
- Combine the oatmeal, cranberries, white chocolate, salt, and collagen (optional) in a large bowl and set aside.
- In a small saucepan on low heat combine the almond butter, honey, and coconut oil, stirring frequently until smooth and melted together.
- Pour the almond butter mixture over the oatmeal and stir until well combined. Pour batter into parchment lined pan and press down.
- Refrigerate overnight (you want to refrigerate overnight because this is a no-bake recipe and this will allow the oats to absorb the moisture and soften). Cut into bars and enjoy! Store in fridge.

- It’s important to let the bars sit in the fridge overnight so that the oats can soften since this is a no-bake recipe.
