This cozy, hearty, and flavorful Creamy Coconut Lentil Curry is an easy and delicious vegan option for dinner or weekly meal prep!

A list of things I’m loving right now:

  1. The fact that Amazon prime has recently added La La Land for FREE viewing (I say recently but truth be told who knows how long it’s been on there). Ummmm hello, LOVE! Ryan Gosling, Emma Stone, singing and dancing, here for it.
  2. Warmer weather giving me the excuse to feel the need to eat Blueberry Cobbler every dang day of the week. No lie, yesterday I ate it for breakfast (with yogurt) and then for dessert (with ice cream).
  3. Creamy Coconut Lentil Curry. The curry of all curries that I was very much needing in my life. Curry really is the gift that keeps on giving because I swear somehow the leftovers seem to multiply in the fridge AND somehow taste better the second time around. It’s filling, it’s healthy, it’s inexpensive, and so dang delicious. Nothing better my friends.

Some of the many reasons you’ll love this Creamy Coconut Lentil Curry:

  • Super easy 1 – pot. Less dishes anyone? I think yes!
  • Hearty and satisfying.
  • Naturally gluten free, dairy free, and vegan.
  • Full of wholesome and healthy ingredients.
  • Super filling for lunch or dinner.
  • Perfectly spiced.
  • Very inexpensive to make.

What you need to make this curry:

Onion: really helps to bring out and enrich the flavors of all the the spices.

Fresh Ginger: can be replaced with 1 tsp powdered ginger but fresh is extra delicious.

Curry Powder: a blend of spices that adds the best flavor to the dish! You can make your own as well, there are many easy recipes you can find online.

Cumin and turmeric: you really just can’t have too much spice in a curry!

Dried lentils: obviously key in a lentil curry. Red, brown, and green (or any other color) will all work.

Tomato sauce: I like a nice smooth curry but you can also use crushed tomatoes as well.

Coconut milk: Canned coconut milks makes this curry next level creamy! I highly recommend using full fat.

Rice: Best served over rice or cauliflower rice of choice. Jasmine is my personal fav.

Can you freeze creamy coconut lentil curry?

Yes! Wait for the curry to cool completely before transferring to the freezer. You can freeze it with rice or without if you prefer to make the rice fresh when you decide to break out the curry next.

Description

This cozy, hearty, and flavorful Creamy Coconut Lentil Curry is an easy and delicious vegan option for dinner or weekly meal prep!


Ingredients

Scale
  • 1 tablespoon olive oil 
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 inch knob fresh ginger, minced
  • 2 tablespoons curry powder, to taste
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/4 teaspoons cayenne powder
  • Salt and pepper to taste 
  • 1 cup dried lentils (rinsed until the water runs clear)
  •  2 1/2 cups of water
  • 1 (15 oz) can tomato sauce
  • 1 15-ounce can coconut milk
  • Rice for serving 

Instructions

  1. In a large pot, heat olive oil over medium high heat. Add the onion and cook 5 minutes or until translucent. Add the garlic, ginger, curry powder, cumin, turmeric, cayenne, and salt and pepper and cook for an addition two minutes, stirring frequently. 
  2. Stir in the lentils, water, and tomato sauce. Bring to a simmer, cover, and let cook for 30-35 min or until lentils are tender. 
  3. Stir in the coconut milk and simmer an additional 5 minutes, uncovered. Serve over rice.

  1. The rice is not accounted for in the Nutrition Facts.
  2. I used red lentils but you can also use green!
