Description
This cozy, hearty, and flavorful Creamy Coconut Lentil Curry is an easy and delicious vegan option for dinner or weekly meal prep!
Ingredients

- 1 tablespoon olive oil
- 1 small white onion, diced
- 2 cloves garlic, minced
- 1 1/2 inch knob fresh ginger, minced
- 2 tablespoons curry powder, to taste
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/4 teaspoons cayenne powder
- Salt and pepper to taste
- 1 cup dried lentils (rinsed until the water runs clear)
- 2 1/2 cups of water
- 1 (15 oz) can tomato sauce
- 1 15-ounce can coconut milk
- Rice for serving
Instructions
- In a large pot, heat olive oil over medium high heat. Add the onion and cook 5 minutes or until translucent. Add the garlic, ginger, curry powder, cumin, turmeric, cayenne, and salt and pepper and cook for an addition two minutes, stirring frequently.
- Stir in the lentils, water, and tomato sauce. Bring to a simmer, cover, and let cook for 30-35 min or until lentils are tender.
- Stir in the coconut milk and simmer an additional 5 minutes, uncovered. Serve over rice.
Notes
- The rice is not accounted for in the Nutrition Facts.
- I used red lentils but you can also use green!
