I made these double chocolate oatmeal muffin cups with the intention of giving myself more time in the morning because that meant I would HAVE to be on time for work, right?? WRONG! That sly minx known as YouTube foiled me and made me late once again. At least I got me some muffins though so there is that. Seriously though, if you want to save yourself some time in the morning then you must prep these for the week! Just make sure that you don’t get distracted by watching Youtube videos of cats getting scared by cucumbers…… that’s one deep rabbit hole to go down friends.
To make these Double Chocolate Oatmeal Muffin Cups you will need:
- banana
- rolled oatmeal
- cocoa powder
- nut milk
- vanilla
- baking powder
- sea salt
- chocolate protein powder
- chocolate chips

These Double Chocolate Oatmeal Muffin Cups are the perfect grab and go breakfast! Make them as part of your meal prep and have breakfast ready for the week.
Ingredients
- 1 mashed banana
- 1 cup old fashioned rolled oatmeal
- 1 heaping tbsp cocoa powder
- 3/4 – 1 cup milk (I used cashew)
- 1/2 tsp vanilla
- 1 tsp baking powder
- pinch of sea salt
- 1 scoop of chocolate protein powder (optional)
- 1/3 cup chocolate chips (or to taste)
Instructions
- Preheat the oven to 400 degrees and prepare 6 muffin cups (either with nonstick spray or muffin liners.)
- Mix all of the ingredients in a bowl and then divide into muffin tins. (NOTE: If you don’t add in any sort of protein powder only use 3/4 cup nut milk. Use a full cup if you use protein powder. The protein powder thickens it a bit)
- Bake for 18-20 min. Let cool and enjoy!
