I feel like I’ve been in a real chocolate mood recently. As Olivia Newton-John as Sandy put it so eloquently in Grease I’m “hopelessly devoted to you” (“you” in this case meaning chocolate). So if you catch me sitting by a kiddy pool in a nightgown staring off into space and singing to myself, I’m probably just day dreaming about chocolate. In this case I’m dreaming about these double chocolate protein pancakes. They’re so easy and you probably already have the ingredients on hand! These are my go-to when I want a pancake breakfast on Saturday morning but I want something simple and quick that will keep me full for hours. These protein-packed pancakes are the perfect tasty solution!

To make these Double Chocolate Protein Pancakes for One you will need:

  • banana
  • egg
  • baking powder
  • one one gluten free flour (or pancake mix of choice)
  • cocoa powder
  • chocolate protein powder
  • nut milk
  • chocolate chips

Description

This single-serve pancake recipe is full of protein and wholesome ingredients. Plus they’re double chocolate so you really can’t go wrong with these Double Chocolate Protein Pancakes for One!


Scale

Ingredients

  • 1/2 mashed banana
  • 1 egg
  • 1/2 tsp baking powder
  • 1 tbsp one to one gluten free flour (or pancake mix of choice)
  • 1 heaping tsp cocoa powder
  • 1 scoop of chocolate protein powder
  • milk of choice (if needed to thin batter)
  • chocolate chips to taste

Instructions

  1. Fully mix together the egg and mashed banana.
  2. Add in the baking powder, flour/pancake mix, cocoa powder, and chocolate protein powder (and milk if needed thin).
  3. Lightly coat a nonstick skillet with oil or butter and heat over medium – medium low.
  4. Drop the batter by 1/4 cup onto the skillet, sprinkle with chocolate chips, and cook until bubbles appear on top. Flip and cook until golden brown on the other side. Add whatever toppings you like (I like banana slices, peanut butter, and more chocolate chips)

Notes

Feel free to double, triple, etc if you’re cooking for multiple people. If you double the recipe, double all of the ingredients. If you triple the recipe (or anything more than that), don’t go above 1 tsp with the baking powder.
