- banana
- egg
- vanilla
- maple syrup
- peanut butter
- nut milk
- zucchini
- rolled oatmeal
- oat flour
- cocoa powder
- baking powder
- chocolate chips

These moist and fudgey Double Chocolate Zucchini Oatmeal Bars will raise a huge question. How are there vegetables in THIS?! And how is this healthy enough to eat for breakfast? Yep, they’re that dang delicious.
Ingredients
- 1 banana, mashed
- 1 egg
- 1 tsp vanilla
- 3 tbsp maple syrup (or honey)
- 1/3 cup creamy peanut butter (or nut butter of choice)
- 1/2 cup nut milk (I like cashew or almond)
- 1 small zucchini (grated and squeezed of excess moisture)
- 1 cup rolled oatmeal
- 1 1/2 cup oat flour
- 1/3 cup cocoa powder
- 1 tsp baking powder
- pinch of salt
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350 F and line a 9×9 pan with parchment paper (or spray with non-stick spray) and set aside.
- In a medium size bowl whisk together the banana, egg, vanilla, maple syrup, peanut butter, nut milk, and zucchini until smooth.
- In a large bowl combine the oatmeal, oat flour, cocoa powder, baking powder, and salt.
- Pour the wet ingredients into the dry and mix until combined. Stir in the chocolate chips.
- Pour the batter into the baking pan, sprinkle with additional chocolate chips (optional), and bake for 20-25 minutes or until a toothpick comes out clean. Let cool, slice, and enjoy!
Notes
- You can easily make your own oat flour by blending rolled oats in a food processor or blender.
- Zucchini contains a large amount of liquid so remember to squeeze out as much liquid as you can!
