Dear banana cake, I love you. You’re like banana bread but better. With icing on top. Cream cheese icing. Cinnamon cream cheese icing to be exact. Soooo dang good. Lately I’ve just had cake on the brain so when a super ripe banana showed up on my counter, I knew what I needed to do.
I could go on but let’s just get to it! This banana cake is so easy and so delicious! Naturally gluten free and only requires 1 ripe banana – for those days when you want to make a banana baked good but you also don’t just have 4 perfectly ripe bananas laying around. Comes together in no time at all and makes for the perfect afternoon snack with a cup of coffee. Enjoy!
To make this Easy Banana Cake you will need:
- almond flour
- gluten free flour
- cinnamon
- eggs
- mashed banana
- coconut oil
- maple syrup
- vanilla
- cream cheese (to make dairy free, just substitute dairy free cream cheese)
- powered sugar
- butter

Easy Banana Cake with Cream Cheese Icing

Ingredients
- 1 1/4 cups almond flour
- 1 cup gluten free flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1 ripe mashed banana (about 1/2 cup)
- 1/4 cup melted coconut oil
- 1/2 cup maple syrup
- 1 tsp vanilla
For the icing:
- 8 oz cream cheese, softened
- 1 tsp butter, softened
- 1 cup powdered sugar
- 1/4 tsp cinnamon
- 1 tsp vanilla
Instructions
- Preheat oven to 350F and line an 8×8 pan with parchment paper or spray with nonstick spray.
- In a medium bowl, whisk together almond flour, gluten free flour, baking soda, cinnamon, and salt.
- In a large bowl, whisk together eggs, banana, coconut oil, maple syrup, and vanilla until smooth.
- Add dry ingredients to wet and stir to combine.
- Pour into baking dish and bake in oven for 25-30 minutes or until toothpick inserted in comes out clean.
- Let cool completely before frosting.
- For the Frosting: Whip together the cream cheese and butter in a stand mixer or with a hand mixer until smooth. Slowly beat in the powered sugar, cinnamon, and vanilla until smooth.
- Frost cake and enjoy!
Notes
- I have not tried different types of ingredients, different flours, etc. Typically almond flour and gluten free flour are fairly interchangeable with each other as well as all purpose flour. However I have’t tried any swaps and can’t guarantee the results.

Oh my goodness…
First my changes: I used all purpose instead of GF flour and doubled the salt (I’m a fiend).
Now to my review – this is SOOOOO GOOD! It just came out of the oven and cooled a bit and I’ve had two slices back to back. Why is it so hard to find a lower sugar banana bread recipe? Well, this is everything I hoped, and the cake format is both fluffier and easier to eat than a loaf. It’s plenty sweet, very soft, and just gooey enough. 11/10 I will make this again in the near future!! It’s the new best way to use an overripe banana.
