We’re all shocked and amazed …
And here I find myself once again, shocking myself as well as my audience (hi mom) by baking something that doesn’t contain a speck of chocolate and rather is light and fruity. My last loaf of sweet bread was Lemon Coconut Bread if you can believe it, and I truly hardly even recognize myself anymore. JK let’s be real, as I’m typing this I’ve just scarfed down 2 chocolate cookies that will hopefully be perfected and find their way to the blog real soon. Thus I don’t think chocolate is going anywhere anytime soon.
What can I say, I’ve just been in a real light, fruity type of mood! Probably due to the heat that has seriously been kicking it up a notch in Houston recently. Yesterday I went on a stroll to try to walk off some frustration I was feeling towards a company’s terrible customer service. You know how it is. Major technology problems arise. You try to contact said technology company for assistance. Said technology company doesn’t believe in customer service via phone so you have to send them an email that they may or may not respond to. One of those. Anyways, my frustration walk happened to occur in the hottest part of the day, so pretty soon Caleb was checking in on me to make sure I hadn’t passed out on my walk from heat exhaustion.
All this to say, after an insanely hot and sweaty walk, I’m not exactly in the mood to chow down on anything chocolate. However I am in the mood for a light and delicious slice of easy breakfast blueberry bread. Easy to make, packed with blueberries, and free of both refined sugar and gluten. Honestly there’s nothing better!
What makes this blueberry bread healthy?
This easy breakfast blueberry bread is healthier than your average blueberry bread. First, it’s made with a combination of almond and oat flour which contain healthy amounts of protein and fiber. Additionally, oat flour is great for cholesterol and is a more nutrient-dense option than all purpose flour.
Easy Breakfast Blueberry Bread is also naturally sweetened with maple syrup and coconut sugar, which lend a subtle sweetness to compliment the blueberries. It’s lower in overall sugar content compared to a coffee shop slice of blueberry bread.
Last but not least, I used coconut oil in place of other oils such as vegetable or canola oil. Coconut oil is great for cholesterol, blood sugar, blood pressure, and more!
Blueberry bread recipe tips:
You can use fresh or frozen blueberries. If you use frozen do not defrost before using; just stir the frozen blueberries into the batter as directed.
Before adding the blueberries to the batter, toss them in a teaspoon of the dry ingredients (or if you forget, a teaspoon of additional flour). This will keep the blueberries from sinking to the bottom.
Let the bread cool completely before slicing. Or better yet, let it rest for a couple of hours at room temperature before serving. Letting the bread cool completely ensures that it will be sturdier.
To make the blueberry bread
- Once you’ve gathered your ingredients, mix the wet in one bowl and the dry in another.
- Next combine the two and fold together until smooth.
- Finally stir in those juicy blueberries.
- Bake, let cool, slice, and enjoy!

This easy breakfast blueberry bread is moist and springy with blueberries in every bite.
- 1/3 cup maple syrup
- 1/3 cup coconut sugar
- 1/2 cup coconut milk (or milk of choice)
- 1/3 cup coconut oil, melted
- 2 eggs
- 1 tsp vanilla
- 1 1/4 cup almond flour
- 1 1/4 cup oat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 cup fresh blueberries
- Preheat the oven to 350 F. Spray a loaf pan with non-stick cooking spray or line with parchment paper and set aside.
- In a medium bowl whisk together the maple syrup, coconut sugar, milk, coconut oil, eggs, and vanilla until smooth.
- In a large bowl mix together the almond flour, oat flour, baking soda, baking powder, and salt. Pour the wet ingredients into the dry and stir to combine. Fold in the blueberries.
- Pour the batter into the prepared loaf pan and bake for 15 minutes. Reduce the heat to 325 and bake for an additional 25-30 minutes or until toothpick comes out clean.
- You can use fresh or frozen blueberries.
