Easy Honey Lemon Tart

There’s just something about a fruit tart that feels extra special even when there’s nothing finicky or difficult about putting it together. This easy honey lemon tart truly combines all of my favorite flavors in the perfect sweet and tart bite.

As the summer is winding down, I am personally not over the summery goodies. Is it because it’s still in the 90s here in Houston? That’s a real possibility…. but all the same…. I am just not in the pumpkin mood yet, you feel me? Get out of here all you maple, apple, and pumpkin goods, I’m not ready for you!

Enter this super easy Honey Lemon Tart! All the fresh flavors with the perfect amount of sweet yet tangy.

  • Makes for the perfect lightened up “healthier” dessert.

This tart requires 2 steps.

  1. Make the tart crust. You will need to prepare the dough, then fully bake the crust and let it cool before filling it with the lemon mixture.
  2. Make the honey lemon filling. Once the filling is ready, fill your crust with it and chill until set.

Tart tips:

Chill the lemon filling in the crust for several hours before serving or the filling will be too runny. After enough chilling time, the filling will firm up, making it easier to cut through the pie.

You can make this tart a day ahead of time. It keeps well in the fridge, covered tightly.

You can top the tart with fresh fruit or whipped cream if you want, but it is also good as is.

Easy Honey Lemon Tart

Description

There’s just something about a fruit tart that feels extra special even when there’s nothing finicky or difficult about putting it together. This easy honey lemon tart truly combines all of my favorite flavors in the perfect sweet and tart bite.


Ingredients

Scale
  • 1 cup pretzel crumbs (about 3–4 cups of pretzels)
  • 1 cup almond flour 
  • 2 tbsp maple syrup 
  • 1/3 cup melted coconut oil

Filling:

  • 1 (8-oz.) package cream cheese, softened
  • 1/3 cup honey
  • 1 container plain Greek yogurt (5.3 oz)
  • 1 tsp grated lemon zest
  • 1 tsp vanilla extract

Glaze:

  • Juice from 1/2 lemon
  • 2 tbsp honey 

Strawberries for topping (or fruit of choice)


Instructions

  1. Preheat oven to 350F and grease a pie dish.
  2. In a food processor, blend pretzels to make crumbs.
  3. Stir the pretzel crumbs, almond flour, maple syrup, and coconut oil until well combined.
  4. Press into greased pie dish and then bake for 10-12 minutes. Take out and let cool completely. 
  5. To prepare the filling, beat the cream cheese and honey with a mixer on medium speed until light and fluffy, 1 to 2 minutes. Add the yogurt, lemon zest, and vanilla, and beat until blended and smooth.
  6. Spread filling evenly in cooled crust. Cover and freeze until firm, about 2 hours.
  7. Arrange strawberries over filling.
  8. For the glaze, whisk together the lemon juice and honey, and drizzle over the tart right before serving.

Notes

  1. You can top with any fruit that you want!
  2. I recommend chilling in the freezer before you serve but then storing in the fridge if you have any leftover.
