The best part about making this Easy One Pan Shakshuka you ask? Well friend let me tell you… the whole time I was testing out this recipe I truly had no idea how to pronounce or spell “shakshuka” which resulted in a various amusing attempts by both me and Caleb. I think at different instances we went with “shatshuka”, “shushuka”, you get the idea. It’s an immensely fun word to pronounce. Or attempt to pronounce that is. But back to what’s actually important here, the recipe!

For this recipe, I took the classic approach with a slight twist! Instead of just using (canned) diced tomatoes, I spiced it up with a fire roasted tomato + regular diced tomato combo! Truly the fire roasted tomatoes take this to the next level. Typically shakshuka is eaten with some type of bread so break out that toast or pita folks! Caleb and I aren’t huge bread people (I know, we’re strange. Mainly me.) so we went with a side of breakfast potatoes instead. Bread or potatoes (or both) you can’t go wrong!

To make this Easy One Pot Shakshuka you will need:

  • eggs
  • olive oil
  • onion
  • red bell pepper
  • fire roasted tomatoes
  • diced tomatoes
  • garlic
  • paprika
  • chili powder
  • cumin

Description

Easy One Pan Shakshuka with a fire roasted tomato twist! This super simple dish is perfect for breakfast, lunch or dinner.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 (15 oz) can fire roasted tomatoes
  • 1 (15 oz) can diced tomatoes
  • 6 eggs

Optional Toppings:

  • fresh cilantro
  • avocado
  • feta cheese

Instructions

  1. Heat olive oil in a large sauté pan on medium heat. Add the onion and cook for 4 minutes. Add in the red bell pepper and cook for an additional 2 minutes. Next add in the spices (garlic, paprika, chili powder, cumin, and salt and pepper) and cook for an additional minute, stirring frequently.
  2. Add in all of the tomatoes and bring the sauce to a simmer.
  3. Use your spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 4-5 minutes, or until the eggs are done to your liking. Top with all of your favorite toppings and enjoy!

Notes

  1. Using both fire roasted tomatoes as well as regular diced tomatoes makes for a nice flavor profile but you can also just use 2 cans of regular diced tomatoes.
  2. Typically shakshuka is eaten with some sort of bread: toast, pita, tortilla, etc. If you’re not a big bread eater this would also be delicious served alongside some breakfast potatoes and/or bacon.
  3. All of the toppings are totally optional but I highly recommend a heavy hand of feta! It truly takes it to the next level.
