This Fire Roasted Turkey Chili takes regular chili to the next level! Done in around 30 minutes, this chili is healthy, packed with protein, and makes for great leftovers!

Chili truly has a special place in my heart. Back when Caleb and I were in college, it seems like if we weren’t baking endless amounts of cookies then we were whipping us up a big pot of chili. To be honest, I was embarrassingly lazy with the level of groceries I kept in my apartment whilst in college therefore Caleb (my then boyfriend, now husband) took it upon himself to make sure I was well fed….. Although I do recall at least one occasion when he was out of town and I ate m&ms for dinner….. yikes.

Enter endless amounts of chili. Why you ask? Because chili is cheap, filling, so delicious, and so dang customizable! We made it so many times that I truly think we’ve perfected the ultimate combination. Truly a big bowl of this chili with a side of watching Guy Fieri on the Food Network just brings back all the memz! The perfect meal to whip up a big batch, I know you’re going to love!

Chili Toppings

Options for chili toppings are endless! Here are some of my favorites:

  • Grated cheddar cheese
  • Sour cream
  • Tortilla Chips
  • Frito Chips
  • Avocado Slices
  • Guacamole
  • Cilantro
  • Lime wedges

What’s the best way to store Fire Roasted Turkey Chili?

This chili makes for great leftovers that stay good all week long in your fridge, and honestly it tastes even better a day or two later!

You can also freeze the chili for several months so it’s a perfect meal to prep ahead of time to have stashed in the freezer for when you’re too busy or tired to cook.

Ingredients and Swaps

One of the many reasons I’m a huge chili fan is how customizable it is!

Don’t have ground turkey? Feel free to swap ground chicken or ground beef. Vegetarian? Double up on the beans and leave our the meat completely!

Not a fan of kidney beans? Try mixing it up with black beans or pinto beans.

Bulk up your chili by adding in other vegetables that you love, carrots or corn would be great options. Or try it served over rice! I know this isn’t a super common way to eat chili but trust me it is sooooo delicious, I highly recommend giving rice a try.

Description

This Fire Roasted Turkey Chili takes regular chili to the next level! Done in around 30 minutes, this chili is healthy, packed with protein, and makes for great leftovers!

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 small red onion, diced
  • 2 bell peppers, chopped
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tsp cumin
  • 1/2 tsp cayenne
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 lb ground turkey
  • Red kidney beans, drained and rinsed
  • 1 can (15 oz) fire roasted tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 cup chicken or veggie broth

Instructions

  1. In a large saucepan or dutch oven over medium heat, warm the olive oil until shimmering. Add the diced onion and cook stirring occasionally until onion is translucent, about 7 – 10 minutes.
  2. Add the bell peppers, chili powder, paprika, cumin, cayenne, onion powder, garlic and salt and pepper. Cook until fragrant while stirring constantly, about 1 minute.
  3. Add in ground turkey, breaking it up and cooking until no longer pink/ cooked through.
  4. Stir in the kidney beans, fire roasted tomatoes, tomato sauce, and chicken broth (if the chili is too thick for you, add more broth or water). Bring to a simmer and continue to simmer for 20 – 25 mins.
  5. Enjoy! Top with cheese, sour cream, jalapenos or any other toppings you want.

Notes

  1. I like to also eat my chili served over rice. I’ve learned that this isn’t common so I highly recommend you give it a try!

This recipe is fantastic! I’ve made it many times now and it always turns out well. I’ve even just put all of the ingredients in the crockpot and it has turned out wonderfully. The fire roasted can tomatoes really give the chili a deeper flavor. I also enjoy the addition of fresh bell pepper. Highly recommend!
