Hello summer and hello fresh strawberry bread! As Houston is now almost back to a full-on lockdown after opening back up and seeing a huge COVID spike, it appears as though we will be remaining indoors for the time being. Thus I was really needing a way to introduce summer into my life since I will be starring at summer out the window and not actually participating in it. Fresh strawberry bread to the rescue! All the flavors of summer that can be enjoyed while sitting indoors, starring out the window, and pretending you remember what fresh air feels like. Although if I’m being perfectly honest, Houston is pretty much unbearably hot in the summer anyways so we’re not missing much.
This super easy recipe can be thrown together super quickly and then you have the perfect breakfast or snack ready for the week (if it lasts that long…).
What makes this strawberry bread healthy?
This easy fresh strawberry bread is healthier than your average strawberry bread. First, it’s made with a combination of almond and gluten free flour which contain healthy amounts of protein and fiber. If you don’t need to be gluten free, you can replace the gluten free flour with all purpose flour.
Fresh strawberry bread is also naturally sweetened with maple syrup and coconut sugar, which lend a subtle sweetness to compliment the strawberries. It’s lower in overall sugar content compared to a coffee shop slice of strawberries bread.
Last but not least, I used coconut oil in place of other oils such as vegetable or canola oil. Coconut oil is great for cholesterol, blood sugar, blood pressure, and more!
Strawberry bread recipe tips:
You can use fresh or frozen strawberries. If you use frozen you don’t have to defrost before using; just chop with a sharp knife then stir the frozen strawberries into the batter as directed.
Before adding the strawberries to the batter, toss them in a tablespoon of the dry ingredients (or if you forget, a tablespoon of additional flour). This will keep the strawberries from sinking to the bottom.
Let the bread cool completely before slicing. Or better yet, let it rest for a couple of hours at room temperature before serving. Letting the bread cool completely ensures that it will be sturdier.
To make the strawberry bread
- Once you’ve gathered your ingredients, mix the wet in one bowl and the dry in another.
- Next combine the two and fold together until smooth.
- Finally stir in those juicy strawberries.
- Bake, let cool, slice, and enjoy!

Ingredients
- 1/3 cup maple syrup
- 1/3 cup coconut sugar
- 1/2 cup coconut milk (or milk of choice)
- 1/3 cup coconut oil, melted
- 2 eggs
- 1 tsp vanilla
- 1 1/4 cup almond flour
- 1 1/4 cup gluten free flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 cup fresh strawberries, diced
Instructions
- Preheat the oven to 350 F. Spray a loaf pan with non-stick cooking spray or line with parchment paper and set aside.
- In a medium bowl whisk together the maple syrup, coconut sugar, milk, coconut oil, eggs, and vanilla until smooth.
- In a large bowl mix together the almond flour, gluten free flour, baking soda, baking powder, and salt. Reserve 1 tablespoon of the dry mixture (see note) then pour the wet ingredients into the dry and stir to combine. Fold in the strawberries (see note).
- Pour the batter into the prepared loaf pan and bake for 15 minutes. Reduce the heat to 325 and bake for an additional 30 minutes or until toothpick comes out clean.
Notes
- You can replace the gluten free flour with all purpose flour.
- To help the strawberries not sink to the bottom while they cook, toss them in 1 tablespoon of the dry mixture before folding them into the batter.
