These Funfetti Birthday Cake Cookies are the perfect sweet treat to take you back to your childhood! So yummy, so dang cute, and so much fun to make!

Is your inner child freaking out right now over these Funfetti Birthday Cake Cookies?!? I know mine sure is! I was downright OBSESSED with Funfetti birthday cake when I was a kid. I was also pretty obsessed with those Lofthouse sugar cookies with the frosting on top that was thicker than the actual cookie…. and these are pretty much a combination of those two delicious items….. so yeah…. freak the heck out!

Tips for making the best Funfetti Birthday Cake Cookies

  • Do not use substitutes. I have not tested any other flours so the recipe should be changed at your own risk. That being said …. frequently all purpose gluten free flour (I used this one) can be equally substituted with regular all purpose flour, oat flour, and sometimes almond flour. Again, I have not personally tested any of these.
  • Measure the flour accurately. For the perfect result, spoon flour into a measuring cup and then level it off with a knife. Scooping directly from the bag can cause a denser amount of flour. Too much flour and you might end up with dry, tough cookies.
  • Use a room temperature egg. Since this recipe calls for melted coconut oil, using a room temp egg will ensure that the coconut oil does not coagulate and cause the cookie dough to become lumpy.

Storing & freezing cookies

To store the cookies: feel free to keep these cookies in an airtight container at room temperature for a few days, then transfer to the fridge or freezer.

To freeze the cookies: make sure the cookies are completely cooled, and then transfer them to an airtight container lined with wax or parchment paper. Freeze for up to 2 months. Once ready to eat, thaw out at room temperature and enjoy! You can frost both before or after they’re frozen (once thawed).

Description

These Funfetti Birthday Cake Cookies are the perfect sweet treat to take you back to your childhood! So yummy, so dang cute, and so much fun to make!


Ingredients

Scale
  • 1/2 cup coconut oil, melted and cooled 
  • 1/3 cup cane sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 3/4 cup all purpose gluten free flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 (heaping) tbsp sprinkles (plus more for on top)
  • Vanilla frosting of choice (I used this brand – my favorite)

Instructions

  1. Preheat the oven to 350 F. Line a baking sheet with parchment paper.
  2. In a large bowl whisk together the coconut oil, sugar, egg, vanilla and almond extract until well combined.
  3. Next, stir in flour, baking soda and salt until a dough forms. Fold in sprinkles. Allow the dough to sit for 3-5 minutes.
  4. Use your hands to roll the dough into golf sized balls. Place on the prepared cookie sheet spaced apart then flatten each dough ball with your hand so that it’s about ¼ inch thick.
  5. Bake for 10-12 minutes. Remove from the oven and let cool on the cookie sheet for 5 minutes. Transfer to a wire rack, let cool completely, and then frost. Enjoy!

  1. I used this all purpose gluten free flour (hence why the cookies are slightly brown. This flour isn’t bright white). Most gluten free all purpose flour is white – any brand of all purpose gluten free flour will work great.
