I used to hate gingerbread and now all of a sudden I’m over here making Gingerbread Cookie Bars and Gingerbread truffles in one week?! Who even is she?? But seriously though guys I don’t know where the heck I’ve been because lately gingerbread is my jammmm. I don’t know if it’s just the holiday cheer or what but my (typically Grinchy) heart has grown a couple sizes and decided that gingerbread was worth a second try.
These gingerbread truffle balls are soooo easy to make and use the smallest amount of ingredients possible! It’s a simple blend in the food processor, freeze, dip in chocolate, freeze, devour! Enjoy 🙂

Gingerbread Truffles

Description
These no-bake gingerbread truffles have all the flavor of a gingerbread cookie and the melt-in-your-mouth texture of a luscious truffle. So perfect for the holiday season (or really any season if you ask me)!
Ingredients
- 3/4 oat flour
- 1 cup pecans
- 1/4 cup molasses
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- Pinch of salt
To Dip:
- 1/3 cup white chocolate chips
Instructions
- Blend the flour, pecans, molasses, cinnamon, ginger, and salt in a food processor until a smooth dough forms. It takes a little while for the pecans to break down so give it some time (but also, see note)
- Roll into balls then place in the freezer on a parchment paper lined tray.
- After the balls have set in the freezer for a little while melt the chocolate either in increments in the microwave or by using a double boiler.
- Dip balls in melted chocolate then return to freezer. Store in fridge or freezer.
Notes
- Make sure not to blend the mixture too long or the oil in the pecans will start to come out and make the whole mixture oily.
- You can substitute the spices for an equal amount of pumpkin pie spice.
