Gooey Cashew Date Bars

True story I was that weird kid who was obsessed with dates from a young age and requested date cake every year on my birthday… when I was like 10 😬…..hey man when you know what you like you know what you like! And these Gooey Date Cashew Bars are no exception! So rich and yet only sweetened with dates and a touch of maple syrup. The dates have an almost caramel-like flavor white the cashews add a buttery crunch. So. Good.

Gooey Cashew Date Bars

To make these Gooey Cashew Date Bars you will need:

  • almond flour
  • coconut flour
  • melted butter (Or coconut oil)
  • vanilla
  • maple syrup
  • salt
  • dates
  • cashews, unsalted

Description

A thick layer of shortbread crust topped by a gooey date and cashew topping. The best ever Gooey Cashew Date Bars!

Ingredients

Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup melted butter (Or coconut oil)
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • Pinch of salt

Filling:

  • 20 dates, pitted
  • 1 tsp vanilla
  • 1 cup raw cashews, unsalted
  • 2–3 tbsp water
  • Sea salt to taste

Instructions

  1. Preheat the oven to 350F and line an 8×8 pan with parchment paper.
  2. In a small bowl, mix together the almond flour, coconut flour, butter, vanilla, maple syrup, and salt until well combined. Press into bottom of pan. Bake for 15-17 minutes or until the crust has slightly browned.
  3. While crust is baking, place dates and vanilla into a food processor. Blend until smooth. Add in one tablespoon of water at a time until date mixture turns into a paste and is spreadable. Add 3/4 cup of cashews into the date mixture and pulse in your food processor to break them up.
  4. Once the crust is done cooking remove from oven and let cool for 10 minutes. Next, place date filling over your cooled crust and carefully spread out with a spatula. Sprinkle the remaining cashews over the filling.
  5. Bake for an additional 15 minutes. Remove from oven and sprinkle with sea salt. Let cool completely before cutting into small bars.

Notes

If your dates have pits, remember to remove them!
