Who doesn’t love Gooey Chocolate Caramel all wrapped up in one easy to make bar? Even better? These bars are low in sugar, vegan, and gluten free!
Current status: sitting around dreaming of all the possible things I can bake with what I have in my pantry during this never ending global pandemic that is COVID19. But on the bright side, I get to spend my days sitting around thinking about baking all day, and that my friends could most certainly be a lot worse. I made these Gooey Chocolate Caramel Bars the other day and I must say they do make sitting indoors and staring out the window enormously more enjoyable. Do I sit by my window creeping on the dog park next door to us all day long? Maybe. Am I always on the hunt for a cute puppy to watch? Definitely. Seriously though guys these bars are honestly so simple to make and so delicious. The vegan caramel is a little more time consuming than I typically go for (still super easy, don’t worry) but trust me it is WORTH IT. Gooey caramel poured over a chewy bar chalk full of chocolate and walnuts? Sign me the heck up!
To make these Gooey Chocolate Caramel Bars you will need:
- canned coconut milk
- coconut sugar
- maple syrup
- almond flour
- rolled oatmeal
- cinnamon
- salt
- cashew butter
- nut milk
- walnuts
- chocolate chips/chunks

Gooey Chocolate Caramel Bars

Who doesn’t love Gooey Chocolate Caramel all wrapped up in one easy to make bar? Even better? These bars are low in sugar, vegan, and gluten free!
Ingredients
Caramel:
- 1 can (full fat) coconut milk
- 1/4 cup coconut sugar
- 3 tbsp maple syrup
Bar:
- 1 cup almond flour
- 1 cup rolled oatmeal
- 1/4 cup coconut sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/3 cup cashew butter (or almond butter)
- 1/4 cup nut milk
- 3/4 cup walnuts
- 1 cup chocolate chips/ chunks
- Sea Salt for topping (optional)
Instructions
- In a medium size sauce pan whisk together the coconut milk, coconut sugar, and maple syrup. Bring to a simmer and let simmer uncovered for 35-40 minutes or until the caramel starts to thicken and coats the back of a spoon. While the caramel is simmering, stir frequently making sure to scrap the sides and bottom of the pan. (If the caramel starts to clump on the sides or bottom, just whisk the clumps back in until smooth)
- Preheat the oven to 350, line a 9×9 in pan with parchment paper and set aside
- In a large bowl mix together the almond flour, rolled oatmeal, coconut sugar, cinnamon, and salt. In a smaller bowl mix together the cashew butter and nut milk.
- Add the wet ingredients into the dry and mix until smooth (batter will be thick). Add in the walnuts and chocolate chunks and stir to combine.
- Scoop the dough into the prepared pan and press down evenly. Pour the caramel over the dough, smoothing evenly with a spatula. Bake for 20 – 25 minutes then sprinkle with sea salt (optional). Let cool completely before slicing (the bars will set up as they cool). Store in the fridge.
Notes
- If you don’t have cashew butter, almond butter would work great as well.
- If you don’t have coconut sugar you can also use white or brown sugar.
