These super easy no-bake Gooey Chocolate Oat Bars make for the perfect sweet treat to have on hand!
You know when there’s something delicious in the fridge and you just keep “finding reasons” that you need to wander past it? “Ohhhh uhhhh did I leave my phone over here? How silly of me that I can’t find my phone I probably accidentally put it IN the fridge. Nope, no phone but what do you know there’s still a couple Gooey Chocolate Oat Bars just hanging out in there begging to be eaten…….” Needless to say these layered bars are so decadent and delicious tasting yet made with all wholesome ingredients. You are going to love!
For these Gooey Chocolate Oat Bars you will need:
- rolled oatmeal
- dates
- honey
- cashew butter
- almond butter
- maple syrup
- coconut oil
- chocolate chips

Gooey Chocolate Oat Bars

Description
These super easy no-bake Gooey Chocolate Oat Bars make for the perfect sweet treat to have on hand!
Ingredients
Bottom Layer
- 2 cups rolled oatmeal
- 7 dates pitted and softened (soften by letting them sit in hot water for 10 minutes)
- 1/4 cup honey
- 1/4 cup cashew butter
Middle Layer
- 1/2 cup almond butter
- 2 tbsp maple syrup
- 2 tbsp coconut oil
Top Layer
- 1 cup chocolate chips
- 1 tsp coconut oil
Instructions
- For the first layer: Combine 1 cup of oats, dates, honey, and cashew butter in a food processor and blend until well blended. Add in the remaining 1 cup of oats and pulse until combined but not fully blended. Flatten dough into an 8×8 pan covered in parchment paper and freeze for 10-15 minutes.
- For the middle layer: In a saucepan, combine almond butter, maple syrup, and coconut oil over low heat. Once melted/smooth, spread mixture over bottom layer and place back in the freezer for about 30 minutes.
- For the top layer: In a saucepan or the microwave, melt together the chocolate chips and coconut oil and pour over middle layer. Place back in freezer until the chocolate has set.
- Store in the fridge or freezer. If you store in the freezer, allow a few minutes to thaw before eating.
Notes
- You can replace the cashew butter in the bottom layer with almond butter or the almond butter in the middle layer with cashew butter if you don’t want to use both.
- You can also swap honey for maple syrup and vice versa.
- Use gluten free rolled oatmeal if gluten free.
