Healthy Asian Peanut Noodles

Description

Healthy Asian Peanut Noodles! The quickest noodle dish you could ever whip up in less than 30 minutes. Full of veggies and the absolute BEST peanut sauce! Vegetarian and gluten free.

Ingredients

  • 8 oz rice noodles
  • 2 cups shredded cabbage
  • 1 bell pepper, cut into thin strips
  • 2 cups matchstick or shredded carrots
  • 1 clove of garlic, minced
  • 1/4 tsp red pepper flakes

For the sauce:

  • 1/4 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • juice from 1 lime
  • 2 tsp sesame oil

Optional Toppings

  • cilantro
  • peanuts

Instructions

  1. Cook the rice noodles according to the package directions and set aside.
  2. In a medium bowl, whisk together the ingredients for the sauce: peanut butter, soy sauce, sriracha, honey, lime juice, and sesame oil until smooth and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add in the garlic and red pepper flakes and cook stirring continuously for about 30 seconds. Stir in the cabbage, bell pepper, and carrots and continue to cook until vegetables soften, about 3 – 5 minutes.
  4. Add the noodles and sauce in with the veggies and toss to combine. Serve garnished with cilantro and peanuts.

Notes

To make vegan, just substitute the honey for brown sugar or maple syrup.
