New year, new me? š¤ More like new year, same old me who loves an oatmeal bake for breakfast. Coming at you with my first recipe of the new year aka these Healthy Kitchen Sink Oatmeal Breakfast Bars! Because letās be real, things donāt change THAT going into the new year, so you knew my heart would still belong to the oatmeal bake. And this one might just be my favorite one yet! Packed full of so many goodies (hence the name), itās honestly so delicious and weāve devoured at least 4 of these bad boys!Ā

Healthy Kitchen Sink Oatmeal Breakfast Bars

Description
The best ever healthy oatmeal breakfast bars with everything but the kitchen sink! So delicious and absolutely full chocolate chips, nuts, coconut, and more!
Ingredients
- 2 ripe bananas, mashed
- 1/4 cup coconut sugarĀ
- 2 tbsp maple syrupĀ
- 1/4 cup melted coconut oilĀ
- 1/4 cup applesauce, unsweetened
- 1/2 tsp vanillaĀ
- 1/2 tsp baking powderĀ
- 1/2 tsp baking soda
- 1/4 tsp saltĀ
- 1 tsp cinnamonĀ
- 3/4 cup gluten free flourĀ
- 1 1/2 cup old fashioned rolled oatmealĀ
- 1/2 cup unsweetened coconut flakes
- 1/2 cup pecans
- 1/2 cup chocolate chipsĀ
Instructions
- Preheat the oven to 350F.
- In a large bowl whisk together the bananas, coconut sugar, maple syrup, coconut oil, applesauce, and vanilla until smooth.
- Add in the baking powder, baking soda, salt, cinnamon, flour, and oatmeal until smooth. Fold in the coconut, pecans, and chocolate chips
- Spread mixture evenly into a 9×9 inch baking pan (I like to line mine with parchment paper) and bake for 20 minutes. Enjoy!

Hi! I was wondering how many cups equal two mashed bananas? I have various sized very ripe bananas, so using them would result in different measurement amounts depending on which sizes I used! Also, could you replace the mashed bananas with all applesauce or part pumpkin purĆ©e? Thank you! š

Hi Angela! 2 medium mashed bananas = about 2/3 cup so that would be my estimate! Luckily this recipe is very forgiving and doesn’t need to be too too precise. I have found however that the riper the bananas, the better the flavor. Also, I have not tried applesauce or pumpkin puree as a replacement but I am guessing it will work. Hope that helps! š
