These insanely delicious healthy monster cookie bars are gluten free, dairy free, nut free, and refined sugar free! So tasty that you would never know that they’re secretly healthy enough to eat for snack or breakfast.

Healthy Monster Cookie Bars

I’ve been on a real “monster” cooking kick recently what with my Healthy Monster Cookies and now these Healthy Monster Cookie Bars. What can I say, I’m just a real sucker for all things themed (aka the theme of “Monster”. Which really doesn’t actually make a whole lot of sense to me because they truly don’t look anything like a monster, but I’m into it all the same) and all things cookie. Cookies. Cookie bars. Cookie flavored things. I think you get it.

A “classic” monster cookie or cookie bar typically is loaded with peanut butter, but since I already have a peanut butter monster cookie I really wanted to make one for all the nut allergies out there! I myself (obviously) don’t have a nut allergy, but frankly it’s unfair that those that do are typically unable to participate in the monster themed cookie fun. So here you non-nuts go! The most INSANE cookie bars that just happen to be gluten free, dairy free, nut free, and refined sugar free (minus the candy of course). They’re honestly just as delicious as the peanut butter version and I promise you won’t even miss it even if you don’t have an allergy. And if you do have a nut allergy you definitely won’t miss it because you will in fact still be breathing without the need of an epipen. That’s what I call a real win win situation. Enjoy!

Healthy Monster Cookie Bars

To make these cookie bars you will need:

  • Gluten free flour – I used this flour. Regular all purpose flour should work as well.
  • Quick Cooking Oatmeal – Rolled oatmeal should also work, but I don’t recommend steel cut.
  • Coconut oil – I have not tried using melted butter but it should work just as well.
  • Coconut sugar – Regular sugar or brown sugar will also work.
  • Egg – I haven’t tried using a flax “egg” but if you do, let me know in the comments!
  • Vanilla extract
  • Maple syrup – Honey or agave will also work.
  • Mini Chocolate Chips – I really like this brand.
  • Mini M&Ms – I think the M&Ms are so fun but you can also replace them with more chocolate chips.

Description

These insanely delicious healthy monster cookie bars are gluten free, dairy free, nut free, and refined sugar free! So tasty that you would never know that they’re secretly healthy enough to eat for snack or breakfast.


Ingredients

Scale
  • 3/4 cup gluten free flour 
  • 1 cup quick cooking oats
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut oil, melted
  • 1/3 cup coconut sugar 
  • 1 egg
  • 1 tsp vanilla 
  • 3 tbsp maple syrup 
  • 1/4 cup mini chocolate chips
  • 1/4 cup mini M&Ms

Instructions

  1. Preheat oven to 350F. Grease an 8×8 inch baking pan or line with parchment paper. Set aside.
  2. In a medium bowl mix together flour, oats, baking soda and salt.
  3. In a large bowl whisk together the coconut oil, coconut sugar, egg, vanilla, and maple syrup until smooth.
  4. Add dry ingredients into wet and mix together until well combined. Stir in chocolate chips and M&Ms
  5. Pour batter into prepared pan; spreading evenly with a spatula.
  6. Bake for 17-20 mins. Let cool then cut into squares.

  1. Store on the counter or in the fridge for up to 5 days or freezer for longer.
