Mediterranean Quinoa Salad

Mediterranean Quinoa Salad makes for a simple and healthy lunch, dinner, or side dish. This flavorful dish is full of fresh vegetables, hearty quinoa, filling chickpeas and tossed in a tasty lemon dressing.




  • 1 cup quinoa cooked according to the package directions
  • 1 can chickpeas, drained and rinsed
  • 1 large tomato, chopped
  • 1 cucumber, chopped
  • 1 avocado, chopped
  • 1/2 red onion, diced
  • 1/2 cup kalamata olives, cut in half


  • juice from 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 garlic cloves, pressed
  • 2 tsp dried oregano
  • 1 tsp dried dill
  • 1 tsp dried thyme
  • salt and pepper to taste


  1. In a small bowl whisk together the ingredients for the lemon dressing: juice from 1 lemon, olive oil, red wine vinegar, garlic, oregano, dill, thyme, salt and pepper and set aside.
  2. In a large bowl toss together the cooked quinoa with the chickpeas, tomato, cucumber, avocado, red onion, and olives. Pour in the lemon dressing and toss again.


I wanted to keep this recipe vegan, but adding feta cheese would be a great addition!
