One of the all-time best and easiest desserts has got to be a warm mixed berry crisp. And even better when this Mixed Berry Crisp for One is all for you!

Mixed Berry Crisp for One! Perfect for those of us who don’t want to commit to taking down a potluck size crisp all by themselves because their husbands are weird and don’t really eat dessert. I love my husband more than anything but his dessert preferences (or lack of) are truly baffling to me… who doesn’t want to eat dessert at every opportunity?? But I digress. Most of the “dessert for one” recipes that I’ve found when I’ve been in need are always in the cake/cookie category. Obviously I’m all about a good mug cake (like this one) but sometimes I’m just feeling a little fruity! Especially when that fruit is actually a fruit crisp. With vanilla ice cream on top. So naturally I had to create this berry crisp for one. Delicious!

To make this Mixed Berry Crisp for One you will need:

  • mixed berries (I used frozen)
  • coconut sugar
  • one one gluten free flour
  • rolled oatmeal
  • butter
  • salt
  • baking soda
  • vanilla

Description

One of the all-time best and easiest desserts has got to be a warm mixed berry crisp. And even better when this Mixed Berry Crisp for One is all for you!

Ingredients

  • 3/4 cup mixed berries (I used frozen)
  • 1 tsp coconut sugar
  • 1 tsp gluten free flour

For the Crumble:

  • 3 tbsp rolled oatmeal
  • 1 tbsp gluten free flour
  • 1 tbsp coconut sugar
  • 1½ tbsp softened butter
  • pinch of salt
  • pinch of baking soda
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 400 degrees.
  2. Place berries in a small baking dish and mix in the sugar and flour.
  3. In a separate bowl, mix together all the crumble ingredients: oatmeal, flour, sugar, butter, salt, baking soda, and vanilla. Use your hand or a fork to make sure all the ingredients are incorporated well. Sprinkle crumble mixture evenly over berries.
  4. Bake for 15-20 minutes or until crumble starts to turn golden. Enjoy! Preferably with some vanilla bean ice cream on top.

Notes

  1. I used mixed berries with this crisp but feel free to use any fruit that you want! Fresh fruit will work as well.
  2. You can replace the butter with coconut oil.
