Do you ever bake something and then wish that it could also somehow be turned into a soap or lotion or something because the scent/flavor is so dang delicious??  That’s pretty much how I feel about this lemon coconut freezer fudge. I’m currently doing my best to resist rubbing this all over my body…. luckily it’s tasty enough that I really wouldn’t want to spare any for anything other than eating. I’m just in love with this lemon coconut flavor! The lemon adds the perfect burst of freshness while the coconut is creamy and smooth. These are the perfect snack to have on the ready in your freezer!

No Bake Lemon Coconut Freezer Fudge

To make this No Bake Lemon Coconut Freezer Fudge you will need:

  • cashews
  • rolled oatmeal
  • unsweetened coconut flakes
  • lemon
  • coconut butter
  • maple syrup
  • pinch of salt

Description

Lemon and coconut make for the perfect flavor combo in this easy No Bake Lemon Coconut Freezer Fudge! Comes together in no time and at all makes for the perfect healthy snack.


Ingredients

Scale
  • 1 cup cashews
  • 3/4 cup rolled old fashioned oatmeal
  • 1/2 cup unsweetened coconut flakes (regular or toasted)
  • Zest and juice from 1 lemon
  • 1/2 cup coconut butter
  • 1/4 cup maple syrup
  • pinch of salt
  • Optional add-ins: 1-2 scoops of collagen

Instructions

  1. Combine all the ingredients in a food processor and blend until no chunks remain.
  2. Press into a loaf pan or 8×8 pan lined with parchment paper.
  3. Freeze for at least 30 minutes before slicing. Store in the fridge or freezer.

Notes

Collagen doesn’t change the texture or the flavor of the fudge, it just adds extra protein if you’re into that.
