No bake peanut butter bars are thick, rich, and decadent. Made from only a handful of simple healthy ingredients, these are a delicious wholesome treat anytime of the year. No oven required!

Healthy, easy, no bake peanut butter bars! Has there ever been a string of words that sounded better than that? Honestly I think not. I seriously love bars like this so much because they’re the perfect thing to throw together when you want a quick, uncomplicated (yet super delicious) sweet treat. After weeks of testing my soft chocolate chip cookies, I was still wanting dessert yet something that was a little more forgiving. Cookies can be so dang temperamental sometimes! But bars? Blend those suckers up, toss em in the freezer and done! Really evokes the “simplicity” of Serving Up Simplicity, you feel me?

Perfect for a healthier dessert or even a snack if you’re feeling something sweet, I know you’re going to love!

  • Super easy – no baking required.
  • Naturally gluten free and can easily be made refined sugar free and vegan.
  • Full of wholesome and healthy ingredients.
  • Makes for the perfect healthy snack or dessert.
  • Ummmmm hello! Peanut butter and chocolate!

To make these bars you will need:

  • Old Fashion Rolled Oatmeal – I don’t recommend using steel cut, but instant should also work.
  • Creamy Peanut Butter  – feel free to substitute for whatever nut butter you want! Cashew, almond, or sunflower seed would all be great.
  • Honey – to make vegan just switch out the honey for agave or maple syrup.
  • Vanilla
  • Cinnamon
  • Coconut oil – Don’t worry you can’t taste any coconut flavor!
  • Chocolate chips– to make refined sugar free just use chocolate chips sweetened with stevia. I like these ones.

Description

No bake peanut butter bars are thick, rich, and decadent. Made from only a handful of simple healthy ingredients, these are a delicious wholesome treat anytime of the year. No oven required!


Ingredients

Scale

For the peanut butter layer:

  • 1.5 cup rolled oatmeal
  • 3/4 cup creamy peanut butter
  • 1/4 cup honey
  • 1 tsp vanilla 
  • 1 tbsp coconut oil
  • 1/2 tsp cinnamon
  • pinch of salt (if your peanut butter is unsalted)

For the chocolate layer:

  • 1 tsp coconut oil
  • 2/3 chocolate chip 

Instructions

  1. Line a loaf pan with parchment paper and set aside.
  2. In a food processor combine the oatmeal, peanut butter, honey, vanilla, coconut oil, cinnamon, and salt. Pulse until well combined then press evenly into prepared loaf pan.
  3. Place the pan in the freezer to set while you prepare the chocolate. Melt the chocolate and the coconut oil together in a double boiler or in increments in the microwave.
  4. Pour the chocolate over the peanut butter layer and smooth out with a spatula. Place back into the freezer until the chocolate is set.
  5. Slice and serve. Store in the freezer.
