Nut Butter Stuffed Dates make a quick and delicious recipe perfect for appetizers, snacks, or a sweet treat!

Stuffed Dates covered in chocolate on a white plate

Sometimes there are trends that make you question your faith in humanity just a little bit (I’m looking at you crocs). And then sometimes a new trend comes along that makes you drool and completely restores your faith in humanity once again. This time I’m looking at you Nut Butter Stuffed Dates. Honestly they’re the perfect little sweet treat! Perfect to make one just for yourself or make a bunch for an appetizer or party snack. Plus dates are packed with fiber so you’re basically eating a chocolate covered vitamin right? I’m pretty sure that’s how that works. 😜

Description

Nut Butter Stuffed Dates make a quick and delicious recipe perfect for appetizers, snacks, or a sweet treat!

Ingredients

Scale
  • 10 dates
  • Nut butter of choice (about 1 tsp per date)
  • 1/3 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Melt your chocolate with the coconut oil in a glass bowl over a pot of boiling water (or in the microwave in increments).
  2. Slice and pit your dates. Place a scoop of nut butter inside each date.
  3. Dip the stuffed dates in the melted chocolate.
  4. Sprinkle with salt salt & freeze until the chocolate sets.

Notes

Sometimes you just want something quick and you’re like “ain’t nobody got time to melt chocolate and individually dip dates”. If that’s you, then I got you covered! Skip melting the chocolate/dipping the date and just sprinkle chocolate chips/chocolate chunks on top! Easy peasy lemon squeezy.
