These Oatmeal Chocolate Chip Cookie Bars are an easy and healthy dessert or breakfast! Only a handful of ingredients and in 30 minutes you’ve got yourself one tasty treat.
This morning I woke up with a real hankering for a good old cookie bar (but honestly what else is new, when do I not wake up with a hankering for cookie related baked goods??). Therefore I knew some sort of cookie bar was in my very near future.
Enter my new Oatmeal Chocolate Chip Cookie Bars! Cookies. But in bar form. Why you ask? Because even with an abundance of mandatory time at home in the middle of this pandemic, I still can’t always bring myself to scoop out dough for individual cookies. Netflix, Hulu, Disney Plus, and Amazon Prime aren’t going to watch themself now will they? Save time for Netflix, watch cookies. That’s my motto.

- Full of wholesome and healthy ingredients.

- Dense, chewy, and actually delicious.
- Cookies but in bar form = less work = more time to binge watch Tiger King on Netflix.
Lets take a look at some of the ingredients:
Coconut Oil – My favorite substitute for other oils and sometimes even butter. Another common substitute for oil is applesauce! I have’t tried it out in this particular recipe but if you do, let me know in the comments.
Maple Syrup – If you don’t have maple syrup you can replace it with any liquid sweetener, honey, agave, etc.
Eggs – I haven’t tried replacing the eggs with flax or chia eggs so if you do let me know in the comments!
Almond Flour – Don’t have almond flour? Swap it out for all purpose flour or one to one gluten free replacement flour. I wouldn’t recommend swapping coconut flour as it is much more absorbent.
Old Fashion Rolled Oatmeal – I don’t recommend using steel cut or instant oatmeal, stick with the old fashioned rolled oatmeal.
Walnuts – The walnuts are totally optional! I know not everyone is a “nuts in desserts” fan. You can also switch out walnuts with whatever your favorite nut is: pecans, macadamia nuts, etc.

These Oatmeal Chocolate Chip Cookie Bars are an easy and healthy dessert or breakfast! Only a handful of ingredients and in 30 minutes you’ve got yourself one tasty treat.
Ingredients
- 1/2 cup coconut oil, melted
- 2 eggs
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 cup almond flour
- 1 1/4 cup rolled oatmeal
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 cup chocolate chips
- 1/2 cup walnuts
Instructions
- Preheat the oven to 350F and line an 9×9 baking pan with parchment paper or spray with non-stick spray.
- In a large bowl whisk together the oil, eggs, maple syrup, and vanilla. (make sure your oil is cooled before you stir in the eggs)
- Stir in the dry ingredients (almond flour, oatmeal, baking soda, cinnamon, and salt) until well combined. Fold in the chocolate chips and walnuts.
- Pour the batter into prepared pan and bake for 25 minutes. Let cool then cut into squares.
Notes
- Remember to let the bars cool before you cut into them. They will set up more as they cool
