Peanut Butter Chocolate Chip Oatmeal Cookies. If you’ve found yourself on my blog even once or twice before you may have noticed that peanut butter, chocolate, and oatmeal ate three ingredients that get a lot of use in my pantry. And based on the analytics for some of my most popular recipes, it sounds like many of you are as big of a fan as I am! So here I find myself once again using three of my favorite ingredients because I really just can’t get enough.
These cookies are dense, thick, chewy, and really pack the best flavor! Truthfully I’ve been eating them for breakfast just about every day because (in my opinion) anything with oatmeal can be classified as a breakfast food if you try hard enough. They’re easy, take less than 30 minutes, and only require one bowl. Does it even get better than that? I think not. Enjoy!
Lets take a look at some of the ingredients:
- Unsweetened Applesauce – May seem random in a peanut butter cookie recipe but applesauce acts as a great oil replacement! Don’t worry, none of the apple flavor comes through.
- Peanut Butter – In my opinion, all natural is the way to go! No unnecessary added sugars or oils.
- Egg – I haven’t tried replacing the egg with flax or chia eggs so if you do let me know in the comments! I do think a replacement would be successful with this particular recipe.
- Vanilla
- Coconut Sugar – Personally, I love the lighter taste of coconut sugar plus I’m a fan of it being a little on the “healthier” side as far as granulated sugars go. However, this could easily be swapped for white sugar or a lighter brown sugar.
- Old Fashioned Rolled Oatmeal or Instant Oatmeal. I don’t recommend using steel cut.
- Oat Flour – I have not tried any other flours but oat flour tends to act similarly to almond flour.
- Chocolate Chips – Chocolate chips because…. chocolate 🙂

These Peanut Butter Chocolate Chip Oatmeal Cookies are, easy, so thick, and full of peanut butter, oats, and all the delicious chocolate to get that cookie fix.
Ingredients
- 1/3 cup unsweetened applesauce
- 1/2 cup natural creamy peanut butter
- 1 egg
- 1 teaspoons vanilla
- 1/2 cup coconut sugar
- 1 1/4 cups rolled oatmeal (or instant)
- 1 cup oat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt (if your peanut butter is unsalted)
- 1/2 cups chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large bowl whisk together the applesauce, peanut butter, egg, vanilla, and sugar until well combined.
- Add in the oatmeal, flour, baking soda, and salt and mix until well combined. Stir in the chocolate chips.
- Scoop about 1 large tablespoon of dough at a time onto prepared baking sheet 2 inches apart and very gently flatten with the palm of your hand just slightly.
- Bake for 8 to 10 minutes, or until set and golden.
Notes
- These are delicate cookies when they are fresh out of the oven, so let them cool 5 minutes on the pan, then enjoy
