Peanut Butter Cup Rice Crispy Treats

When I was a kid on Halloween I pretty much viewed all candy that wasn’t chocolate in some form as a waste of candy. 😂. Bonus point if it was some kind of chocolate candy that also had peanut butter (the exception was those sour green apple caramel covered suckers, remember those??? I was randomly a sucker for those… see what I did there?).

So naturally I also tended to view your classic rice crispy treat as a bit of a waste as well. Needless to say, I had to develop a rendered crispy treat that included both of my true loves. And if using chocolate cereal and creamy peanut butter wasn’t enough I decided I should probably go ahead and add peanut butter cups as well because…. why the heck not!

Peanut Butter Cup Rice Crispy Treats

To make these Peanut Butter Cup Rice Crispy Treats you will need:

  • cacao brown rice cereal
  • peanut butter cups
  • honey
  • peanut butter
  • coconut oil

Peanut Butter Cup Rice Crispy Treats

Description

Rice crispy treats get a makeover with these Peanut Butter Cup Rice Crispy Treats! Creamy peanut butter, sweet honey, and delicious chunks of peanut butter cups.


Ingredients

Scale
  • 3 cups cacao brown rice cereal
  • 10 peanut butter cups, chopped
  • 2/3 cup creamy peanut butter
  • 1/3 cup honey
  • 2 tsp coconut oil

Instructions

  1. In a large bowl combine the cereal and peanut butter cups. Set aside.
  2. In a small sauce pan add the peanut butter, honey and coconut oil. Stir on low heat until melted.
  3. Once melted, pour over the cereal mixture and mix well so that the cereal mixture is covered.
  4. Pour into an 8×8 baking dish lined with parchment paper and press down. Let them settle for a bit in the fridge
  5. Cut into bars and enjoy! Store in the fridge.

Notes

This is the cereal that I used! If you don’t want the cereal to be chocolate flavor you can use the classic plain rice crispy cereal.
