Description

These Peanut Butter Pretzel Energy Bites combine crunchy pretzels, salty peanut butter, and sweet chocolate in one delicious snack!

Ingredients

  • 3 tbsp chia seeds 
  • 1/3 cup creamy peanut butter
  • 2 tbsp coconut oil, melted 
  • 3 tbsp maple syrup
  • 1 tsp vanilla 
  • 1 1/4 cups rolled oatmeal
  • 1 cup pretzels
  • 1/3 cup mini chocolate chips 

Instructions

  1. In a large bowl mix together the chia seeds, peanut butter, coconut oil, maple syrup, and vanilla until well combined.
  2. Pulse the oatmeal in a food processor until it’s starting to resemble flour then dump into the peanut butter mixture.
  3. Next pulse the pretzels in the food processor until “crushed” – somewhere between whole and completely ground.
  4. Add the pulsed pretzels and chocolate chips to the large bowl and mix all ingredients together until combined.
  5. Shape into balls (it helps to squeeze them to stick together). Chill in the fridge or freezer for 20-30 minutes. Enjoy!

Notes

I keep these in the freezer so they last longer and hold their shape nicely but they do well at room temperature for a day or two and in the fridge for a couple days as well.
