Move over nutter butters! These healthier peanut butter sandwich cookies are lightly sweet, full of peanut butter, and highly delicious.

Peanut Butter Sandwich Cookies

A common debate I love to bring up with people is the infamous question: “what’s your favorite packaged cookie?”. Honestly it’s such a great question to ask because I have found that 1. people seem to have wildly strong opinions about something as innocuous as a packaged cookie and 2. For some reason everyone also seems to think that everyone else’s opinions are completely crazy. Try it out at the next party you go to, trust me it’s a fabulous ice breaker.

You may have guessed by now that my favorite packaged cookie is the Nutter Butter! Well I mean I’m also a sucker for an Oreo or a crunchy Chips Ahoy but we’ll leave those for another day. So being that Nutter Butters are one of my favorites, I just had to develop a version of my own. First of all I wanted these cookies to be on the healthier side with less sugar than the OG (which contain in insane amount of unnecessary sugar in my opinion) and secondly I needed these to be gluten free because (sadly) I have to be gluten free. Well friends I must say I freakin nailed these! They were so good that I didn’t even share them with friends or family so you know they have truly got to be fabulous!

Peanut Butter Sandwich Cookies

To make these cookies you will need:

  • Coconut oil – I have not tried using melted butter but it should work just as well.
  • Creamy peanut butter – All natural with just peanuts or just peanuts and salt it my favorite.
  • Maple syrup – Honey or agave will also work.
  • Vanilla extract
  • Gluten free flour – I used this flour. Regular all purpose flour should work as well. You may need to add a bit more of it if the dough is too wet (see note in recipe)
  • Powdered sugar – I just used regular powdered sugar but if you’re looking for sugar free this is a good one.

Move over nutter butters! These healthier peanut butter sandwich cookies are lightly sweet, full of peanut butter, and highly delicious.

Ingredients

  • 4 tbsp coconut oil, melted
  • 1/2 cup creamy peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup gluten free flour 
  • 1/4 tsp baking powder
  • a pinch of salt (if your peanut butter doesn’t have salt)

Filing 

  • 1/3 cup creamy peanut butter
  • 2–3 tbsp powdered sugar 

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the coconut oil, peanut butter, maple syrup, and vanilla until smooth. Stir in the flour, baking powder, and salt. If the dough is crumbly, add 2-3 tsp water. If the dough feels too moist, add 1-2 tbsp flour.
  3. Roll the dough into tbsp size balls. Gently flatten each cookie and create a crisscross pattern with a fork. Bake for 10-12 minutes.
  4. For the filling, mix together the peanut butter and powdered sugar until well combined. Once the cookies are completely cool, spread an even layer on one cookie and sandwich another on top. Enjoy! (Makes about 10 sandwiches)

Notes

  1. If the dough is crumbly, add 2-3 tsp water. If the dough feels too moist, add 1-2 tbsp flour.
  2. You can replace the flour with all purpose flour.
