These healthy Protein Pancakes for One are packed full of protein and delicious flavor alike! The perfect lazy morning Saturday breakfast.
Peanut butter and jelly. Chocolate and wine. Peas and carrots (minus the peas because ew). Pancakes and Saturdays. You get the idea. This is my go-to pancake recipe when I’m wanting a super simple recipe for just one person! (feel free to double, triple, etc if you’re cooking for multiple people). Plus, since these pancakes are full of protein, they give me energy for the day instead of making me feel like I need to immediately take a nap like typical pancake recipes do. And if we’re being honest, sometimes you just need a little mid-week pick me up and this recipe is fast and easy enough for that too! You’re going to love!
To make these Protein Pancakes for One you will need:
- banana
- egg
- baking powder
- one one gluten free flour (or pancake mix of choice)
- vanilla protein powder (this one is my favorite)
- nut milk

Protein Pancakes for One

Description
These healthy Protein Pancakes for One are packed full of protein and delicious flavor alike! The perfect lazy morning Saturday breakfast.
Ingredients
- 1/2 mashed banana
- 1 egg
- 1/2 tsp baking powder
- 1 tbsp one to one gluten free flour (or pancake mix of choice)
- 1/2 tsp vanilla (optional)
- 1–2 scoops vanilla protein powder
- Milk of choice (if needed to thin batter)
Instructions
- Fully mix together the egg and mashed banana. Add in the baking powder, flour/pancake mix, and vanilla protein powder (and milk if needed).
- Lightly coat a nonstick skillet with oil or butter and heat over medium – medium low.
- Drop the batter by 1/4 cup onto the skillet and cook until bubbles appear on top. Flip and cook until golden brown on the other side.
- I served mine with maple syrup, banana, and chocolate chips.
Notes
- I love making this recipe into chocolate chip pancakes but feel free to go with whatever flavor you want! A second favorite of mine is blueberry!
- Feel free to double, triple, etc if you’re cooking for multiple people. If you double the recipe, double all of the ingredients. If you triple the recipe (or anything more than that), don’t go above 1 tsp with the baking powder.
