So a lot of you have been asking about my skin care routine…… lol. I kid. Literally no one has ever asked me about my skincare (btw I use MaryKay like a grandma. Aka the same exact product that I’ve been using since 7th grade, so not much to say there anyways). But several of you have, for real, been asking me to make a pad thai recipe. Truly I love me some pad thai, it’s absolutely one of my favorite foods to order at a Thai restaurant. For a hot second I really wanted to make my own version of it. That is until I took a bit of a deeper dive into pad Thai and realized I certainly didn’t have all the classic ingredients which turns out are in fact pretty important.
Thus I decided to pivot and make a noodle stir fry with what I already had and tend to always have on hand. Well friends she done good! This quick and easy stir fry ended up blowing me away! Caleb and I both loved this recipe so I knew that I needed to share asap!

I digress, back to the noodle stir fry! Healthy, insanely quick, full of veggies, the best sauce, all the good things! You’re going to love!
How to make Quick and Easy Noodle Stir Fry
This noodle stir fry is so easy to prepare and the perfect weeknight dish!
- Cook the noodles according to package directions and toss them in sesame oil.
- Sauté first the chicken and then the veggies.
- Whisk together the sauce ingredients.
- Toss together the noodles, chicken, veggies, and sauce.
- Done!
Tips and Variations
The great thing about a noodle stir fry is that you can customize it however you like! Here are some great options for swaps:
- Veggies: You can use almost any veggies you want including snow peas, broccoli, green beans, bamboo shoots and cabbage. Sautéing time may vary depending on the vegetable.
- Spice Level: For a spicier dish, try adding additional sriracha or crushed red chili flakes.
- Meats: You can make a tasty beef noodle stir fry by using thinly sliced flank steak. You can also substitute the chicken for shrimp or omit the meat altogether and use tofu as your source of protein.

Quick and Easy Noodle Stir Fry

Description
This noodle stir fry is loaded with chicken, colorful veggies, and the best savory sauce. It couldn’t be faster or easier to throw together for a quick weeknight meal.
Ingredients
- 8 oz rice noodles
- 1 tbsp sesame oil
- 1 tbsp vegetable or olive oil
- 1 lb chicken breast, sliced into very thin strips
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 2 garlic cloves, minced
- ¼ cup peanuts, roughly chopped (or more to taste)
- fresh cilantro for topping (optional)
For the Sauce
- 2 tbsp coconut sugar (or brown sugar)
- 2 tbsp water
- 2 tbsp soy sauce
- juice from 1 lime
- 1 tbsp rice vinegar
- 1 tbsp smooth peanut butter
- 1 tbsp sriracha
Instructions
- Cook the rice noodles according to package directions. Drain, rinse in cold water, then toss in sesame oil. Set aside.
- In a small bowl, whisk together all of the ingredients for the sauce and set aside.
- While the noodles are cooking, heat vegetable oil in a large nonstick pan over medium-high heat. Once hot, add chicken and let cook for 3-4 minutes or until cooked almost all the way through.
- Add bell peppers, carrots and garlic to the pan and sauté for 3-4 minutes until vegetables have softened.
- Add sauce and noodles and toss to combine. Continue to cook, stirring frequently for 1-2 minutes (don’t let the noodles overcook).
- Top with chopped peanuts and cilantro and serve.
Notes
- Feel free to use any veggies that you want in this recipe, just make sure to adjust the cooking time if necessary. I particularly enjoy purple cabbage.
