Do you ever have a lot of earwax in one ear and hardly any in the other ear and you’re like uhhhhhhh what the heck ears?? I take you fellas all the same places, what’s the deal? Just me?? See these are the cuckoo things I spend my days thinking about and then by the time I snap out of my pondering, it’s 5:30 pm and I can already feel the hangry approaching!

The good news for me (and you) is I have the perfect 30 minute recipe at the ready. Introducing my Saucy 30 Minute Chicken Curry! Packed full of delicious curry spice flavor and luscious coconut milk, this is the fastest cozy meal to throw together.

To make this Saucy 30 Minute Chicken Curry you will need:

  • garlic powder
  • cumin
  • turmeric
  • curry powder
  • garam masala
  • black pepper
  • salt
  • ginger
  • olive oil
  • yellow onion
  • chicken breast
  • orange bell pepper
  • tomato sauce
  • tomato paste
  • coconut milk
  • rice to serve (I like Jasmine)

This Saucy 30 Minute Chicken Curry is packed full of flavor and on the table in no time at all! Perfect for a weeknight meal.

Ingredients

  • 1/4 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 2 tsp curry powder
  • 1 tbsp garam masala
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 inch fresh grated ginger
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 2 chicken breasts, cubed
  • 1 orange (or red) bell pepper, chopped
  • 1 15 oz can tomato sauce
  • 1 tbsp tomato paste
  • 1 can coconut milk
  • Rice for serving

Instructions

  1. Combine all the of spices in a small bowl (garlic powder, cumin, turmeric, curry powder, garam masala, black pepper, salt, and ginger). Set Aside.
  2. Heat the oil in a large pan over med-high heat. Once heated, add in the onion and cook for about 5 minutes or until softened. Add in the spices and cook an additional minute, stirring occasionally.
  3. Add in the chicken and sauté until almost cooked through. Add in the bell pepper and cook for an additional minute, stirring occasionally.
  4. Stir in the tomato sauce, tomato pasta, and coconut milk and simmer for 10 minutes. Serve over rice.

  1. My favorite rice to serve with this dish is basmati but you can use any kind you like!
