Let me tell you, it’s been a real hot minute since I’ve made brownies. Like honestly over a year I think. I really couldn’t even tell you why because I am in fact a big brownie fan. I think they somehow slip my mind because it seems like such an obvious choice and I’m alway wanting to try new things, ya know? But let me tell you, there is just something about a brownie that’s fresh out of the oven, super fudgy, and chalk full of chocolate chips that can’t be beat! Plus the added bonus of they’re actually healthy and full of nutrients? Well shut the front door and sign me the heck up!
The key to keeping these brownies moist and fudgy AF really lies within the sweet potatoes. Sweet potatoes in brownies sounds strange at first, but trust me you can’t even taste them! They’re really just there to keep the delicious fudgy factor without having to use buckets of butter, you feel me? These Super Fudgy Sweet Potato Brownies are so easy, one bowl, and take less than 30 minutes. You’re going to love!
To make these Super Fudgy Sweet Potato Brownies you will need:
- sweet potato
- almond butter
- vanilla
- egg
- coconut sugar
- cocoa powder
- pinch of salt
- chocolate chips

Super Fudgy Sweet Potato Brownies

Just a handful of simple healthy ingredients needed to whip up these Super Fudgy Sweet Potato Brownies. Decadent and rich, you would never know that they’re healthy!
Ingredients
- 1 cup mashed sweet potato
- 1/2 cup creamy almond butter
- 1 tsp vanilla
- 1 egg
- 3/4 cup cocoa powder
- 1/2 cup coconut sugar
- 1/4 tsp salt
- 1/2 cup chocolate chips (plus more for on top, optional)
Instructions
- Preheat the oven 350F. Line a 9×9 baking pan with parchment paper or spray with non-stick cooking spray and set aside.
- In a large bowl, whisk together the sweet potato, almond butter, vanilla, and egg until smooth.
- Stir in the cocoa powder, coconut sugar, salt, and chocolate chips until fully mixed.
- Pour batter into prepared pan, smooth to make sure that the batter is evenly distributed in the pan. Sprinkle extra chocolate chips on top (optional). Bake for 22-25 minutes (you want the center to still be semi gooey). Let the brownies cool completely, slice, and enjoy!

- To prepare the sweet potatoes I recommend steaming them, but baking would also work.
