It just goes to show how well my sweet husband knows me when he decided to make me sweet potato pie bars with a cold brew coffee twist for my birthday! Sweet potato pie? Good. Cold brew? Good. Sweet Potato Pie Coffee Bars? So. Dang. Good. Honestly I’m not even sure how he came up with the idea, but it just WORKS. Plus they’re healthy enough to eat as a snack or for breakfast so…… you really can’t go wrong here.
To make these Sweet Potato Pie Coffee Bars you will need:
- sweet potato
- cold brew
- maple syrup
- arrowroot powder
- pumpkin pie spice
- vanilla
- pecans
- rolled oatmeal
- almond flour

Sweet Potato Pie Coffee Bars

Your average sweet potato bars just got a coffee makeover with these Sweet Potato Pie Coffee Bars. Easy, quick, and all around delicious!
Ingredients
Filling
- 4 cups sweet potato, peeled & diced (about 2 medium)
- ½ cup cold brew
- ½ cup maple syrup
- 3 tbsp arrowroot powder
- 1 tbsp pumpkin pie spice
- 1 tsp vanilla extract
- pinch of salt
Crust
- 1 cup pecans
- 1 cup rolled oats
- 2 tbsp almond flour
- 5 tbsp water
- 3/4 tsp salt
Instructions
- Preheat the oven to 350F. Add the diced sweet potatoes to a vegetable steamer or a pot + colander combination with 3″ of water. Cover and steam for 15 minutes, or until fork tender.
- Next prepare the base layer for the bars. Add the pecans, rolled oats, almond flour, water and salt to a food processor and process until a fine crumble forms. Press the dough into a greased or lined 8×8 baking tray and use a spatula to pack it down.
- Add the steamed sweet potato to the food processor with the remaining ingredients, and process until thick and smooth. Spread this mixture over top of the oat crumble, using a spatula again to even out the top.
- Place the pan in the oven and bake for 30-35 minutes
- let cool for at least 30 minutes before removing from the pan and slicing.
Notes
- These bars are lightly sweet so if you want a sweeter bar just add some type of granulated sugar (not more liquid sugar)
- If you don’t have arrowroot powder you should be able to substitute it for corn starch.
